1 (16 ounce) package sliced frozen okra (or equivalent in fresh)
1 large sweet onion, thinly sliced
1 (15 ounce) can chopped tomatoes, stewed style if you prefer
salt & pepper

Steps:

  • Heat oven to 375°.
  • Spray a 9X13 Pyrex dish with cooking spray.
  • Layer 1/2 the okra, 1/2 the sliced onion and 1 can tomatoes.
  • Salt and pepper to taste.
  • Repeat.
  • Bake uncovered for 45 minutes.
  • Place oven on "broil" and broil for 5 minutes or to desired doneness.
  • Onions and tomatoes should just start to turn golden.
  • Be creative with your own addition of veggies or seasonings!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup water
¾ cup uncooked brown rice
¼ teaspoon paprika
¼ tablespoon ground black pepper
4 skinless, boneless chicken breasts
1 (16 ounce) package frozen okra, thawed and sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a 9x13 inch baking dish combine the soup, water, rice, okra, paprika and ground black pepper. Place the chicken on top of the rice mixture. Sprinkle with additional paprika and ground black pepper.
  • Cover and bake in the preheated oven for 45 minutes or until the chicken is cooked through and the juices run clear. (For creamier rice, increase the water amount to 1 1/3 cups).

1 to 3 lb fresh okra, sliced about 1/4-inch thick
1 pkg stovetop stuffing mix, any flavor (we like the cornbread flavor best)
1/4 c (1/2 stick) butter or margarine
water as called for on stuffing mix package
salt and pepper to taste
2 eggs (optional)
2/3 c milk or light cream (optional)

Steps:

  • 1. Heat butter and water together to a boil in a large saucepan. Stir in the stuffing mix, handling gently so it doesn't pack down. Let set 5 minutes, and fluff with a fork.
  • 2. Season the okra with salt and pepper. Toss the okra with the stuffing mix until all is well combined. Spoon the mixture into a 2-3 quart casserole dish.
  • 3. Now, you can bake this for 15-20 minutes in a 350° oven until okra is done and dressing is crunchy. Or, if you like a dish that you can cut into squares, do the following:
  • 4. After spooning mixture into casserole dish, beat together the eggs and milk. Pour evenly over the casserole, using a fork to help it penetrate the dressing and okra. Bake at 350° for 30 minutes until eggs are set. Allow to cool 5 minutes before slicing.
  • 5. Cheese lovers: feel free to top with shredded cheese during the last 10-15 minutes of baking. Some good options are Swiss, Cheddar, or Parmesan.

1 1/2 lbs okra
6 teaspoons vegetable oil
1 onion, chopped fine
6 tomatoes, peeled,chopped
1 lb beef, ground
1 cup stock
2 cloves garlic, crushed
1 teaspoon salt
3 teaspoons plain yogurt
3 teaspoons sour cream
1/2 teaspoon white pepper
1 tomatoes, thinly sliced
1 lemon, thinly sliced

Steps:

  • Cut stalks from okra.
  • Heat 3 tablespoons oil in a large saucepan.
  • Add okra, saute 6 minutes.
  • Drain sauteed okra on paper towels.
  • Discard oil, wipe pan with paper towels.
  • Heat 2 more tablespoons oil in saucepan.
  • Add onion and tomatoes, saute until heated through.

  • Bake 50-60 minutes.
  • Garnish with tomato and lemon slices.

1 pound okra
Salt
1/2 cup red wine vinegar or apple cider vinegar
2 tablespoons extra virgin olive oil
1 small chicken, cut up into 8 pieces, skinned if desired
1 large or 2 smaller onions, cut in half lengthwise then thinly sliced across the grain
2 teaspoons coriander seeds
1 teaspoon Aleppo pepper, mild chili powder or smoked paprika
4 garlic cloves, puréed with a pinch of salt
1 pound tomatoes, seeded and grated; or peeled, seeded and chopped
1/2 teaspoon sugar
1 tablespoon tomato paste diluted in 2/3 cup water
Juice of 1 lemon
Freshly ground pepper
1/4 cup chopped fresh parsley
Plain thick yogurt for serving optional

Steps:

  • Trim the stems from the okra, and place them in a large bowl. Salt generously, douse with the vinegar, and let sit for 30 minutes to an hour while you prepare the other ingredients and begin cooking the dish. Toss from time to time.
  • Heat half the olive oil over medium-high heat in a large lidded skillet or casserole. Brown the chicken in batches. Set the chicken aside in a bowl. Drain off excess fat from the pot and discard. Turn the heat down to medium, and add the remaining olive oil and the onions. Cook, stirring, until they begin to soften, about three minutes. Add the coriander seeds and Aleppo pepper (or chili powder or paprika), and stir until the onions are tender, about two minutes. Add the garlic, and stir for about 30 seconds until fragrant. Add the tomatoes and sugar. Cook, stirring often, until the tomatoes have cooked down slightly, about 10 minutes. Stir in the dissolved tomato paste, and bring to a simmer. Add salt to taste.
  • Return the chicken pieces to the pot, reduce the heat to low, cover and simmer for 25 to 30 minutes.
  • Drain the okra, and rinse thoroughly. Add to the pot with the chicken, arranging the okra on top of the chicken pieces. Add the lemon juice, cover the pan and simmer for another 20 to 25 minutes. The chicken should be cooked through, and the okra should be just tender.
  • If you wish, remove the chicken to a platter. Stir the okra into the sauce, and add the parsley. Add salt and pepper to taste, then spoon over the chicken and serve. Alternatively, stir everything together in the pot, season, and serve with rice or bulgur. Pass thick plain yogurt for topping.
