MY FRIEND'S OLD FASHIONED COCONUT CUSTARD PIE

My Friend's Old Fashioned Coconut Custard Pie image

My good friend & co-worker, Colleen, used to bring this pie to our company pot-lucks. It disappeared like new fallen snow every time, and sometimes caused a scuffle or two...it is that good!! Before she retired she shared the recipe with a few of us. My husband can eat the whole thing in 1 night! On top of that, it is easier...

OLD-FASHIONED COCONUT CUSTARD

Old-fashioned Coconut Custard image

This recipe came from a friend who worked for a period at a well known regional restaurant in Qld known as Weis'. This makes one of the smoothest, creamiest baked custards that I've ever had the privilege of tasting. All those eggs can make it a bit 'eggy' you may be able to eliminate this with the addition of a little cream cheese as used in some flans. Otherwise, modify the recipe maybe use one less egg or use 4 whole eggs 1 yolk etc. I still love this custard...don't let that put you off trying it...plz. Cooking time is a suggestion only.

Tips:

  • Use fresh coconut milk. Fresh coconut milk will give your custard a richer flavor and a creamier texture.
  • Don't overcook the custard. Overcooked custard will be grainy and tough. Cook it just until it has thickened and coats the back of a spoon.
  • Let the custard cool completely before serving. This will allow the flavors to develop and the custard to firm up.
  • Serve the custard with your favorite toppings. Some popular toppings include fresh fruit, whipped cream, and toasted nuts.

Conclusion:

Old-fashioned coconut custard is a delicious and easy-to-make dessert that is perfect for any occasion. With its creamy texture and rich coconut flavor, this custard is sure to be a hit with everyone who tries it. So next time you're looking for a sweet treat, give this recipe a try.
