⅓ cup white sugar
2 teaspoons ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup white sugar
1 egg, beaten
1 cup milk
⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
  • In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
  • Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.

1/3 cup shortening
1-1/2 cups plus 2 tablespoons sugar, divided
3 large eggs
1-1/2 teaspoons vanilla extract
3 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1-1/2 cups buttermilk
1 tablespoon ground cinnamon

Steps:

  • In a large bowl, cream shortening and 1-1/2 cups sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk., Spread half of the batter in two greased and floured 8x4-in. loaf pans. Combine cinnamon and remaining sugar; sprinkle half over batter. 1 egg
3 tablespoons butter or 3 tablespoons margarine, softened
3/4 cup brown sugar
1 1/2 teaspoons ground cinnamon
1 cup powdered sugar
1 -2 tablespoon milk
1 tablespoon butter or 1 tablespoon margarine, melted
1/2 teaspoon pure vanilla extract

These can also be baked in mini loaf pans, but adjust the baking time, they also freeze very well. I most always double the topping mixture!
