2 cups all-purpose flour
2 teaspoons baking powder
1 cup white sugar
1 teaspoon salt
½ cup butter
1 egg
1 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) grease and flour an 8x4 inch loaf pan.
  • In a large bowl, mix flour, baking powder, sugar and salt. Cut in butter. Break 1 egg into a measuring cup and then fill to the 1 cup line with milk. Add to dry ingredients and beat well. Add vanilla and lemon flavoring.
  • Pour batter into an 8x4 inch loaf pan. Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted into the center of cake comes out clean.

50 g butter
1 tablespoon golden syrup
1 egg
1/2 cup sugar
1 tablespoon cocoa
1 cup flour
1 teaspoon baking powder
3 drops vanilla essence
1 teaspoon baking soda
3/4 cup milk
2 cups icing sugar
1/4 teaspoon butter, softened
2 tablespoons water, aprox
1/4 teaspoon vanilla essence
1 tablespoon cocoa (2 for a richer icing)

Steps:

  • pre-heat oven to 190 degrees Celsius.
  • grease a 20cm round cake tin and line base with baking paper.
  • melt butter and syrup in a small saucepan.
  • pour melted ingredients into a small bowl.
  • add egg and sugar, beat well.
  • sift cocoa, flour and BAKING POWDER together.
  • fold sifted ingredients and essence into egg mixture.
  • dissolve baking soda in milk.
  • fold into egg mixture.

  • leave in tin 5 minutes before turning out onto wire rack.

  • sift icing sugar and cocoa in a bowl, add butter, add sufficient water to mix to a spreadable consistency, flavour with essence.

this is the an easy cake ,when your in a hurry.i use it to make a pineapple udpside down cake,its not to sweet.or you can just frost it,it makes a small cake.this is perfect for a couple of single people.

3/4 c sugar

1/2 tsp salt
1/4 c shortening
2/3 c milk
1 egg
1 tsp vanilla

  • 1. mix all this together,i use a whisk.and pour into a greased round pan,it only makes one layer,its a very basic cake.you can frost this,or i take a can of crushed pineapple,and drain it well,then put it first in the pan,and then some brown sugar and melted butter on that,and then pour the cake over it,and bake .when done ,invert on a plate.and serve with whip cream,this is perfect for 2 people,or a single person.
