Steps:
- Combine mayonnaise and ranch dressing mix in a gallon-sized resealable plastic bag to make the marinade. Place chicken in the bag, squish around to cover, and refrigerate while preparing the other ingredients.
- Preheat oven to 400 degrees F (200 degrees C). Grease a large rimmed baking sheet the size of your oven with olive oil.
- Place red potatoes and baby carrots along the outer edges of the baking sheet, leaving room in the middle for the chicken. Season with salt and pepper.
- Pour breadcrumbs into a bowl or onto a plate. Remove chicken from marinade and drain off excess marinade. Coat chicken in the breadcrumbs and place on the baking sheet with some room in between the pieces.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Turn on the oven's broiler and broil for an additional 3 to 5 minutes.

Tips:
- Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured. This will help you save time and avoid scrambling during the cooking process.
- Choose the Right Pan: For this recipe, you'll need a large, oven-safe skillet that has a lid. This will allow you to cook the chicken and vegetables in one pan, and then transfer the skillet to the oven to finish cooking the chicken.
- Season the Chicken Generously: Don't be shy with the seasonings! The chicken will soak up all the flavor, so make sure to season it well with salt, pepper, and any other desired spices.
- Cook the Chicken Thoroughly: Make sure to cook the chicken until it reaches an internal temperature of 165°F (74°C). This will ensure that the chicken is safe to eat.
- Don't Overcook the Vegetables: The vegetables should be cooked until they are tender-crisp. If you overcook them, they will become mushy and lose their flavor.
- Use a Variety of Vegetables: Feel free to use any vegetables that you like in this recipe. Some good options include broccoli, carrots, bell peppers, and zucchini.
- Add Cheese at the End: Stir in the cheese towards the end of the cooking process. This will help prevent the cheese from burning or becoming overcooked.
Conclusion:
One-pan cheesy chicken and vegetables is a quick, easy, and delicious meal that is perfect for busy weeknights. It's also a great way to get your kids to eat their vegetables! The chicken is tender and juicy, the vegetables are flavorful and tender-crisp, and the cheese adds a gooey, cheesy goodness that everyone will love.
