CHEF JOHN'S AMERICAN GOULASH

Chef John's American Goulash image

One of my all-time favorite comfort food meals growing up was the beef goulash they served in my school cafeteria alongside a slice of buttered white bread and a carton of milk. Little did I know that it wasn't really goulash, but an Americanized version, invented to stretch a small amount of beef into enough food for a not-so-small family. This is one of those very simple dishes that does not taste simple--perfect for your weeknight dinner rotation.

  • Remove goulash from heat. Discard bay leaves; stir in parsley and Cheddar cheese. Cover and let rest for 5 minutes. Taste and season as desired.

ONE POT GOULASH

One Pot Goulash image

This is one of those recipes that is usually better the next day after the flavors all meld together. Very quick and easy to make your own by adding or subtracting ingredients. My husband doesn't like really hot food so i use original RoTel tomatoes when he's eating this - if it's just me I go with the hot or extra hot. Great with hot rolls and a vegetable.

1/2 cup onion, diced

1 tablespoon chili powder (more or less to taste)
2 (10 ounce) cans Rotel Tomatoes

  • Boil 6 cups salted water (add a little oil to the water so the macaroni won't boil over)Add macaroni (stir to separate) let boil for 6 to 8 minutes. Drain and set aside.
  • Return pot to stove heat oil and add green pepper and onion - saute until tender.
  • Add hamburger, salt, pepper and chili powder to onions/pepper mixture and cook until no longer pink.

Tips:

  • For the best flavor, use high-quality beef chuck roast. If you can't find chuck roast, you can substitute another cut of beef, such as rump roast or sirloin steak. Just be sure to adjust the cooking time accordingly.
  • Brown the beef in batches so that it doesn't crowd the pan and steam instead of browning. This will give the beef a nice, caramelized flavor.
  • Use a good quality paprika. Hungarian paprika is a good choice, but you can also use Spanish or smoked paprika.
  • Don't be afraid to add a little spice to the goulash. A pinch of cayenne pepper or chili powder can really give it a kick.
  • Serve the goulash with egg noodles, mashed potatoes, or rice. You can also garnish it with sour cream, chopped parsley, or paprika.

Conclusion:

One-pot beef goulash is a hearty and flavorful dish that is perfect for a cold winter night. It's easy to make and can be customized to your liking. So next time you're looking for a comforting and delicious meal, give this recipe a try.
