olive oil
1 lb ground beef
1 small white onion, diced
1 tablespoon garlic, minced
2 tablespoons taco seasoning, divided
½ lb small macaroni, dry
1 cup water
2 cups beef stock
2 cups shredded white cheddar, yellow cheddar works as well

green onion, diced, for garnish

  • Add garlic and stir for 30 seconds.
  • Add the ground beef and 1 tablespoon of taco seasoning. Using your spatula, break up the ground beef and stir until cooked. Drain the excess liquid from the pan.
  • Add water, beef stock, pasta, tomatoes, and 1 tablespoon of taco seasoning back to the pan. Stir to combine.
  • Cook over low heat for 15 minutes, stirring twice to keep the pasta from sticking to the bottom of the pan.
  • Increase heat to medium after 15 minutes, and stir pasta until most of the liquid is gone.
  • Turn off heat and add the shredded cheese. Stir until cheese is completely melted.
  • Top with green onions.

Tips:

  • Use high-quality ingredients for the best flavor. Fresh vegetables, flavorful cheese, and well-seasoned ground beef will make a big difference in the final dish.
  • Don't overcook the pasta. It should be al dente, or slightly firm to the bite. Overcooked pasta will be mushy and unpleasant.
  • Add the cheese gradually. Stir in a little bit at a time until the sauce is smooth and melted. Adding too much cheese at once can make the sauce clumpy.
  • Season the dish to taste. Add more salt, pepper, or taco seasoning until it reaches your desired flavor.
  • Serve the pasta immediately. It's best when it's hot and fresh out of the pot.

Conclusion:

This one-pot cheesy taco pasta is a quick, easy, and delicious meal that's perfect for busy weeknights. It's also a great way to use up leftover ground beef. With its flavorful sauce, tender pasta, and melted cheese, this dish is sure to be a hit with the whole family. So next time you're looking for a quick and easy dinner, give this recipe a try.
