A simple one-pot oven dish. Very tasty and easy, the potatoes cooking in the stock which is enriched by the chicken, olives and lemon. I can't remember where I saw this first and can't find the recipe. So I've been experimenting and this is the closest I can get to the original. Please feel free to amend with your improvements!

4 chicken pieces
6 medium potatoes, halved
1 medium onion, chopped
2 lemons
2 pints chicken stock
10 -15 black olives
1 teaspoon thyme
1 bay leaf
salt and pepper

Steps:

  • finely chop the onions.
  • peel and halve the potatoes.
  • de-stone the olives.
  • bring chicken stock to the boil.
  • put potatoes, onions, olives and herbs in a deep-sided casserole dish and cover with the hot stock.
  • add the juice of the lemons.
  • add seasoning.
  • place chicken pieces on the top (doesn't matter if they sink, but the skins will brown nicely if they rest on the potatoes).
  • place in the middle of a 200c for 50 minutes or until the potatoes begin to break up.
  • serve in bowls with green beans or other green veg.

1 chicken (skin removed and cut into pieces)
1 large onion (chopped)
3 or 4 cloves of garlic (finely chopped or pressed)
2 teaspoons ginger
1 teaspoon salt (or to taste)
1 teaspoon turmeric
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon chicken bouillon (optional)
1/4 teaspoon saffron threads, (crumbled - optional)
1/4 cup chopped fresh parsley or cilantro
1/3 cup olive oil
3 or 4 large potatoes
one or two handfuls of red olives
1 preserved lemon (quartered and seeds removed - optional)

Steps:

  • In a large, heavy-bottomed pot or Dutch oven, combine the chicken, onion, garlic, spices, parsley, and oil. Cook, covered, over medium heat, without adding water, for 30 to 40 minutes, or until the chicken is almost done. Stir occasionally to turn the pieces of chicken, and watch the heat so that the chicken doesn't stick to the bottom of the pot and burn.
  • Peel and quarter the potatoes. Add them to the pot, along with the olives, preserved lemon, and enough water to almost cover the potatoes. Bring the liquids to a simmer and cook, partially covered, until the potatoes are tender and the sauce is quite thick.
  • Slice the onion instead of chopping it, and spread the onion slices on the bottom of a large tagine. Peel the potatoes and thinly slice them and layer them on top of the onions. (Or, you can cut the potatoes into wedges, and arrange them around the chicken after completing the next step.)
  • In a large bowl, combine the chicken, garlic, spices, and parsley. Add the chicken to the tagine Swirl 1/2 cup of water in the bowl to mix it with the spices, and add this water to the tagine. Pour the olive oil over all, and distribute the olives (and preserved lemon, if using) over the chicken and potatoes.
  • Cover the tagine and place it on a diffuser over medium-low to medium heat. Allow the tagine ample time to reach a simmer, and then reduce the heat to the lowest temperature necessary to maintain the simmer.
  • Interrupt the cooking after 1 hour and 15 minutes to check on the level of liquids. If you feel a little more water is needed, add it to the tagine, keeping in mind that the final sauce should be thick and not watery.
  • Continue cooking the tagine, covered, for another 30 minutes or more, until the chicken and potatoes are very tender. Let the tagine rest off the heat for about 10 minutes before serving.

Coarse salt
1 tablespoon extra-virgin olive oil
1 1/4 cups chicken stock
12 ounces baby fingerling potatoes or halved small potatoes
5 garlic cloves, smashed and peeled
1/2 cup green olives, such as Cerignola, pitted if desired
1 small lemon, washed well, cut into wedges
6 thyme sprigs
1 teaspoon cornstarch

  • Preheat oven to 450 degrees. Season chicken with salt. Heat a large, heavy ovenproof skillet (preferably cast iron) over medium-high heat. Swirl in oil. 2 bay leaves
Olive oil
4 tablespoons fresh thyme leaves
4 medium russet potatoes, peeled, cut into 1 1/2-inch pieces

Steps:

  • Preheat oven to 450°F. Slide hand between chicken skin and meat over breast and legs to form pockets. Spread 4 tablespoons olive paste over breast and leg meat of chicken. Spread remaining 2 tablespoons olive paste in cavity of chicken. Place bay leaves in cavity. Tie legs together to hold shape. Rub olive oil into chicken skin. Sprinkle with salt and pepper. 3 tbsp olive oil
500g new potatoes
140g large pitted green olives
1 lemon, quartered
8 fresh bay leaves
6 garlic cloves, unpeeled
4 large chicken thighs
bag watercress or salad leaves, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pour the olive oil into a large roasting tin and add the potatoes, olives, lemon quarters, bay leaves and garlic. Toss everything together so it's coated in oil and evenly distributed. Add the chicken thighs, skin-side up, and season.
  • Put the roasting tin in the oven and roast for 1 hr, basting with the pan juices halfway through cooking. After 1 hr, check that the potatoes are soft and the chicken is cooked through, then return to the oven for a final 15 mins to crisp the chicken skin.
  • Remove the roasting tin from the oven. Press down on the roasted garlic cloves with the back of a spoon, discard the skins, and mix the mashed garlic with the meat juices. Serve with watercress or your favourite salad leaves on the side.
