I've changed it a little bit over time. My whole family loves this recipe. It is easy to make, and you can serve this warm or at room temperature, it's delicious either way.

Tips:

  • Use a large pot: This recipe makes a lot of food, so make sure you have a large pot that can accommodate all of the ingredients.
  • Don't overcrowd the pot: If you add too much chicken or pasta to the pot at once, it will not cook evenly. Add the ingredients in batches if necessary.
  • Use fresh vegetables: Fresh vegetables will give your dish the best flavor. If you don't have fresh vegetables on hand, you can use frozen vegetables instead.
  • Don't overcook the chicken: Chicken is very easy to overcook, so be careful not to cook it for too long. It should be cooked through but still juicy.
  • Use a good quality peanut butter: The peanut butter is one of the key ingredients in this dish, so make sure you use a good quality brand. Look for a peanut butter that is made with 100% peanuts and no added sugar or salt.
  • Serve immediately: This dish is best served immediately, while the chicken is still hot and the sauce is still creamy.

This One-Pot Thai Peanut Chicken Pasta is a delicious and easy-to-make meal that is perfect for a busy weeknight dinner. It is packed with flavor and is sure to be a hit with the whole family.
