Creamy Dreamy Spinach, Onion, and Bacon Dip image

From my favorite gal of all time!! Dip may made up to 2 days ahead of time, covered and refrigerated. Let stand 20 minutes before baking as directed. (These are Paula's directions, but I had to bake for a few minutes more, as well as place under the broiler for a few minutes to get the top browned). Prep time does not include thawing time for spinach and onions.

Yield Makes about 3 1/2 cups

Number Of Ingredients 8

3 tablespoons extra-virgin olive oil
1 large onion, chopped (1 3/4 cups)
1/2 lb shallots, chopped
1/2 lb baby spinach, coarsely chopped
3 ounce cream cheese, softened
1 (16-ounce) container sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion and shallots, stirring, until lightly browned, about 2 minutes. Reduce heat to moderate and continue to cook, stirring occasionally, until softened, about 8 minutes more. Add spinach and cook, stirring, just until wilted, about 2 minutes. Remove from heat and cool slightly.
  • Transfer spinach mixture to a bowl, then stir in cream cheese, sour cream, salt, and pepper until combined well. Chill, covered, at least 1 hour.

Tips:

  • Use fresh ingredients: Fresh onions and spinach will give your dip the best flavor. If you can, use organic ingredients to avoid pesticides and herbicides.
  • Don't overcook the onions: Onions should be cooked until they are soft and translucent, but not browned. Overcooked onions will have a bitter taste.
  • Use a good quality cream cheese: The cream cheese is the base of the dip, so it's important to use a good quality brand. Look for a cream cheese that is smooth and spreadable.
  • Season the dip to taste: Onion and spinach dip is a versatile dish that can be seasoned to your liking. Add more salt, pepper, or garlic powder until the dip reaches the desired flavor.
  • Serve the dip with a variety of dippers: Onion and spinach dip can be served with a variety of dippers, such as crackers, chips, vegetables, or bread. For a healthier option, serve the dip with whole wheat crackers or vegetable crudités.

Conclusion:

Onion and spinach dip is a delicious and easy-to-make appetizer that is perfect for any occasion. With its creamy texture and flavorful ingredients, this dip is sure to be a hit with your guests. So next time you're looking for a quick and easy snack or appetizer, give onion and spinach dip a try. You won't be disappointed!
