RESTAURANT-STYLE FRENCH ONION SOUP

Restaurant-Style French Onion Soup image

Classic French onion soup, similar to one you can get in a restaurant. Made with wine and sherry to bring out the beef flavor of the broth. Two different cheeses top it off to give it that bubbly, browned, and stretchy topping.

Time 1h35m

Yield 6

Number Of Ingredients 14

½ cup butter
8 onions, sliced
2 cloves garlic, crushed
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 teaspoon dried thyme
1 cup red wine
1 tablespoon sherry
2 tablespoons all-purpose flour
2 quarts beef broth
1 French baguette, cut into 1/2-inch thick slices
olive oil, or as needed
6 slices Swiss cheese
6 slices provolone cheese

Steps:

  • Melt butter in a large soup pot over medium heat. Cook and stir onions, garlic, salt, black pepper, and thyme until onions are soft and brown, about 30 minutes. Pour in red wine and sherry; bring to a boil. Reduce heat to low and simmer until you can no longer smell alcohol cooking off, about 15 more minutes.
  • Sprinkle onion mixture with flour and stir until coated; cook for 10 minutes. Pour in broth, stir to blend in flour, and simmer until slightly thickened, about 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C) while soup is simmering. Arrange bread slices on a baking sheet and drizzle with olive oil.
  • Toast the baguette slices in the preheated oven until golden brown, 12 to 14 minutes, turning the bread over halfway through cooking. Remove toast and set aside.
  • Set an oven rack about 8 inches from the heat source and turn on the oven's broiler.
  • Ladle soup into 6 oven-proof crocks, filling them about 3/4 full. Place 1 or 2 bread slices into the bowls and top each with a slice of Swiss cheese and a slice of provolone. Carefully place filled crocks onto a sturdy baking sheet.
  • Broil soup until the cheese is browned and bubbling, 3 to 4 minutes.

ONION SOUP WITH GRUYERE AND MADEIRA

Onion Soup With Gruyere and Madeira image

This was made on tv and I made several changes to it because I found there was too much liquid compared to the onions when I followed the recipe. Do not leave out making and using the liason of egg yolks, cream, brandy and Madeira, it makes the soup more special, also very rich! For the madeira you could substitute, dry Port or Sherry.

Yield Makes 6 servings

Number Of Ingredients 16

1/2 cup raisins or dried currants
3 tablespoons red wine vinegar
2 pounds small boiling onions
6 tablespoons extra-virgin olive oil
6 chicken leg-thigh pieces, cut apart
1 28-ounce can diced tomatoes in juice
1 cup canned low-salt chicken broth
1/2 cup dry white wine
1 tablespoon ground coriander
1 teaspoon honey
1 teaspoon ground allspice
1 teaspoon coarsely ground black pepper
2 bay leaves
Peel of 1 small orange, removed in strips using vegetable peeler
1 cinnamon stick
1 teaspoon dried oregano

Steps:

  • Combine raisins and vinegar in small bowl; set aside. Cook onions in large saucepan of boiling water 5 minutes. Drain; cool slightly. Trim and peel onions.
  • Preheat oven to 350°F. Heat 3 tablespoons oil in heavy large ovenproof pot over medium-low heat. Add onions and sauté until golden, about 10 minutes; transfer to large bowl. Sprinkle chicken with salt and pepper. Add 1 tablespoon oil to same pot. Working in batches, add chicken to pot and cook over medium-high heat until golden brown, about 5 minutes per side. Add chicken to bowl with onions. Add tomatoes with juices, broth, wine, coriander, honey, allspice, and 1 teaspoon pepper to pot. Bring to boil, scraping up any browned bits. Return chicken and onions to pot. Stir in bay leaves, orange peel, cinnamon stick and oregano. Cover tightly and bake until chicken is cooked through, about 1 hour.
  • Stir raisin mixture and remaining 2 tablespoons oil into stew. Season with salt and pepper. Transfer to shallow bowl.

Tips:

  • Utilize Sweet Onions: For a naturally sweeter soup, opt for sweet onions like Vidalia or Walla Walla instead of yellow or white onions.
  • Caramelize Onions Properly: Patience is key when caramelizing onions. Cook them over medium-low heat, stirring occasionally, until they turn a deep golden brown color and have a slightly sweet taste.
  • Use Good Quality Madeira Wine: Madeira wine adds a unique depth of flavor to the soup. Choose a dry or medium-dry Madeira wine for the best results.
  • Add Raisins Strategically: Incorporate raisins during the last 10-15 minutes of cooking to prevent them from becoming too plump and losing their shape.
  • Season to Taste: Adjust the seasonings, especially salt and pepper, to your personal preference.

Conclusion:

This classic French onion soup with raisins and Madeira wine is an exquisite culinary delight that combines the sweetness of caramelized onions, the subtle tang of Madeira wine, and the chewy texture of raisins. It's a perfect dish for a chilly evening, offering both comfort and elegance. Whether served as a starter or a main course, this soup is sure to impress your taste buds and leave you craving for more. Its rich and flavorful broth, complemented by the sweet-tart notes of raisins and the nutty undertones of Madeira wine, creates a harmonious symphony of flavors that will tantalize your palate. Indulge in this timeless recipe and experience the magic of French cuisine in every spoonful.
