Tips:

  • Mise en Place: Before you start cooking, gather all the ingredients and equipment you need. This will make the cooking process smoother and more efficient.
  • Choose Fresh Ingredients: Use fresh, high-quality ingredients for the best flavor. Fresh oranges, juicy cranberries, and tender cornish hens will make all the difference in this recipe.
  • Prepare the Cornish Hens: Rinse the cornish hens inside and out, and pat them dry. Season the hens liberally with salt, pepper, and any other desired seasonings before roasting.
  • Roast the Cornish Hens: Place the cornish hens in a roasting pan and surround them with the orange slices, cranberries, and rosemary sprigs. Roast the hens in a preheated oven at 400°F (200°C) for 45-50 minutes, or until the internal temperature reaches 165°F (74°C). Baste the hens with the pan juices every 15 minutes to keep them moist.
  • Make the Orange Glaze: While the hens are roasting, make the orange glaze by combining orange juice, honey, Dijon mustard, and cornstarch in a saucepan. Bring the mixture to a simmer over medium heat, stirring constantly. Reduce the heat to low and simmer for 5-7 minutes, or until the glaze has thickened. Remove from heat and set aside.
  • Glaze the Cornish Hens: When the hens are done roasting, remove them from the oven and let them rest for a few minutes. Brush the hens with the orange glaze and return them to the oven for 5-10 minutes, or until the glaze is golden brown and bubbly.
  • Serve and Enjoy: Garnish the Cornish hens with fresh orange slices and rosemary sprigs before serving. Serve the hens with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple green salad.

Conclusion:

This Orange Cornish Hen for Two recipe is a delicious and elegant dish that is perfect for a special occasion meal. The hens are roasted to perfection and glazed with a sweet and tangy orange glaze.
