ORANGE GINGER FROSTING

Orange Ginger Frosting image

This frosting is the perfect topping for Carrot Ginger Cupcakes.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes about 3 cups

Number Of Ingredients 6

4 tablespoons unsalted butter, room temperature
8 ounces cream cheese, room temperature
1 cup confectioners' sugar
2 teaspoons freshly grated orange zest
2 teaspoons freshly grated ginger
Pinch of salt

Steps:

  • Place butter in the bowl of an electric mixer fitted with the paddle attachment, and beat on medium-high speed until fluffy, about 2 minutes. Add cream cheese and confectioners' sugar, beat until well combined and fluffy, about 2 minutes more. Add orange zest, grated ginger, and salt. Beat an additional 5 minutes.

Tips:

  • To make the orange ginger spread, you will need oranges, ginger, sugar, lemon juice, and pectin. You can use fresh or frozen oranges, but fresh oranges will give you the best flavor.
  • When choosing oranges, look for ones that are heavy for their size and have a deep orange color. Avoid oranges that are bruised or have soft spots.
  • To zest the oranges, use a microplane or a fine grater. Be sure to zest only the orange part of the peel, not the white pith.
  • When grating the ginger, use the small holes on your grater. This will help you get a fine ginger paste.
  • If you don't have pectin, you can use lemon juice instead. Lemon juice will help the spread to thicken, but it will also give it a slightly tart flavor.
  • To test the spread for doneness, spoon a small amount onto a cold plate. If the spread wrinkles when you push your finger through it, it is done.
  • Once the spread is done, pour it into a clean jar and seal it tightly. The spread can be stored in the refrigerator for up to 2 weeks.

Conclusion:

Orange ginger spread is a delicious and versatile condiment that can be used in a variety of ways. It can be spread on toast or crackers, used as a glaze for chicken or fish, or added to yogurt or oatmeal. The orange and ginger flavors pair well together, creating a sweet and tangy spread that is sure to please everyone. So next time you are looking for a new and exciting way to use oranges and ginger, give this orange ginger spread a try.
