We like this with Plenty of brown rice to catch the extra sauce. Adding the chicken frozen slows down the cooking somewhat, but this is still a relatively quick dish. Found in Not Your Mother's Slow Cooker Cookbook.

2 tablespoons frozen orange juice concentrate (thawed)
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons hoisin sauce
3 slices fresh ginger (peeled about 1/4-inch thick)
3 garlic cloves (minced)
1 tablespoon sesame oil
2 teaspoons cornstarch
2 teaspoons cold water
1 tablespoon toasted sesame seeds (optional)
6 frozen boneless skinless chicken breast halves (do not thaw)

Steps:

  • In a zip lock bag, combine the orange juice, honey, soy sauce, hoisin sauce, ginger, garlic, and sesame oil. One at a time, put the chicken in the bag, seal, and gently shake to coat with the sauce. Transfer the coated chicken to the slow cooker, then pour the remaing sauce over the chicken.
  • Cover and cook on low until the chicken is tender and cooked through 5-6 hours.
  • Transfer the chicken to a warm platter. Strain the sauce through a fine mesh strainer into a small saucepan. In a small bowl, stir together the cornstarch and cold water. Bring the sauce to a boil over high heat, add the slurry, and cook, stirring a few times until thickened, 1-2 minutes.
  • Pour some of the sauce over the chicken & pass the rest on the side. If desired, sprinkle the sesame seeds over the top.

3 whole chicken breasts, cut in 2-inch cubes
1/2 cup soy sauce
2 tablespoons sesame oil
2 tablespoons olive oil
Juice of 1/2 lemon
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
1/4 teaspoon ground chilies
1 teaspoon rosemary leaves
3/4 cup hoisin sauce (available in Oriental groceries)
3 tablespoons rice vinegar
1/2 cup freshly squeezed orange juice
2 minced scallions
2 tablespoons sesame oil
Coarse salt and freshly ground pepper to taste
Sprigs of rosemary for garnishing

Steps:

  • Marinate chicken in mixture of soy sauce, sesame oil, olive oil, lemon juice, garlic, ginger, chilies and rosemary leaves for at least two hours. Thread chicken on skewers.
  • Combine hoisin sauce, vinegar, orange juice, scallions and sesame oil. Season to taste with salt and pepper.
  • Preheat grill or broiler. Cook chicken for about five minutes on each side, or until done, basting with marinade. Garnish plates with rosemary sprigs. Serve sauce separately in small bowl.

1/4 cup hoisin sauce
2 tablespoons rice vinegar or 2 tablespoons cider vinegar
2 tablespoons orange rind
2 tablespoons orange juice
1/4 teaspoon hot pepper sauce
1 lb boneless skinless chicken breast, sliced lengthwise 1/2 inch thick

Steps:

  • Mix everything together and let stand at least 15 minutes.
  • Thread 1 piece of chicken onto metal skewer or soaked wooded skewer.

3 slices peeled fresh ginger, about 1/4" thick
3 cloves garlic, minced or pressed
1 TBL sesame oil
6 frozen boneless skinless chicken breast halves (not thawed)
2 tsp cornstarch
2 tsp cold water
1 TBL sesame seeds (toasted)

Steps:

  • In a gallon zippered plastic baggie, combine OJ concentrate, honey, soy and hoisin sauces, ginger, garlic and sesame oil. Put chicken in, one breast halve at a time, and sake to coat. Transfer all to slow cooker, cover and cook on LOW until chicken is tender and cooked through (5-6 hours). NOTE: For some slow cookers, this is HIGH. For sauce, strain sauce through fine mesh strainer into small saucepan over high heat. Stir in small bowl the cornstarch with cold water. Bring sauce to boil then add slurry and cook, stirring a few times, until thickened, 1-2 min. Pour over chicken or just pass around. Serve with rice.
