Time 20h35m

Yield 6 to 8 servings

Number Of Ingredients 16

6 ounces good semisweet chocolate, chopped
2 ounces good bittersweet chocolate, chopped
1/4 cup orange liqueur (recommended: Grand Marnier)
1/4 cup water
1 teaspoon pure vanilla extract
1 teaspoon grated orange zest
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
8 extra-large eggs, at room temperature, separated
1/2 cup plus 2 tablespoons sugar
Pinch kosher salt
1/2 cup cold heavy cream
Whipped Cream, recipe follows, for decoration
Mandarin oranges, drained, for decoration
2 cups (1 pint) cold heavy cream
2 tablespoons sugar
Dash pure vanilla extract

Steps:

  • Combine the 2 chocolates, orange liqueur, 1/4 cup water, and the vanilla in a heat-proof bowl. Set it over a pan of simmering water just until the chocolate melts. Cool completely to room temperature. Whisk in the orange zest and butter until combined.
  • Place the egg yolks and 1/2 cup of the sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on high speed for 4 minutes, or until very thick and pale yellow. With the mixer on low speed, add the chocolate mixture. Transfer to a large bowl.
  • Place 1 cup of egg whites (save or discard the rest), the salt, and 1 tablespoon of the sugar in the bowl of an electric mixer fitted with the whisk attachment. Beat on high speed until firm but not dry. Whisk 1/4 of the egg whites into the chocolate mixture; then fold the rest in carefully with a rubber spatula.
  • Without cleaning the bowl or whisk, whip the heavy cream and the remaining tablespoon of sugar until firm. Fold the whipped cream into the chocolate mixture. Pour the mousse into individual dishes or an 8-cup serving bowl. Chill and decorate with whipped cream and oranges. Serve with extra whipped cream on the side.
  • Whip the cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar and vanilla and continue to whip until the cream forms stiff peaks. Don't overbeat, or you'll end up with butter!

1/8 teaspoon salt

Using an electric mixer, beat the cream on medium speed just until stiff peaks form, 2 to 3 minutes, being careful avoid over-beating. Using a rubber spatula, gently fold half of the whipped cream into the chilled orange mixture. Pour that mixture into the remaining whipped cream and continue to fold until completely incorporated. Divide the mixture among six 3-ounce serving bowls or espresso cups. Cover with plastic wrap and refrigerate until ready to serve.
  • When ready to serve, put the gingersnaps in a resealable plastic bag and smash gently with a rolling pin. Sprinkle on top of the mousse, and serve.

GHIRARDELLI® CHOCOLATE AND ORANGE MOUSSE CAKE

Ghirardelli® Chocolate and Orange Mousse Cake image

A decadent flourless chocolate cake featuring a creamy chocolate mousse. The combination of chocolate cake, rich mousse and orange make this an impressive holiday dessert.

Provided by Ghirardelli

Categories     Trusted Brands: Recipes and Tips     Ghirardelli®

Time 11h20m

Yield 12

Number Of Ingredients 12

1 cup Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
2 sticks salted butter
1 ¼ cups sugar
6 large room temperature eggs, separated
1 cup Ghirardelli® Unsweetened Cocoa Powder
½ teaspoon salt
1 teaspoon vanilla extract
¾ cup Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
½ tablespoon butter
¼ cup warm water
3 whole eggs, separated
½ tablespoon grated orange zest

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch spring form pan and line with parchment paper.
  • In a large microwaveable bowl melt 1 cup chocolate chips and butter together. You can do this over a pot of simmering water (bain marie) or gently in the microwave.
  • When the chocolate has cooled, whisk in sugar then add 6 egg yolks, one at a time. Add in the vanilla extract.
  • Sift cocoa and salt over chocolate mixture and whisk to combine.
  • In a stand mixer (or using a hand mixer) beat 6 egg whites at medium high speed until peaks form and it becomes stiff.
  • Gently fold in a large spoon full of the egg whites to the chocolate mix. This is called "introducing." It will loosen up the chocolate mixture. Then follow with the rest of the egg whites. Gently folding, taking care to maintain the bubbles in the eggs.
  • Pour batter into the prepared pan and bake for 40 to 45 minutes or until it is just set. Take care not to overbake or it won't be as moist. Cool the cake in the tin until totally cold. The cake will naturally fall in the center but that is normal.
  • Cover the cake and set it aside until ready to decorate. This cake is best made the day before.
  • For the Chocolate Mousse: Put 3/4 cup chocolate chips, butter and orange zest in a heatproof bowl and place over a pot of simmering water (bain marie) to melt. Gently stir until melted. Remove from the heat and cool.
  • Whisk 3 egg whites in a large clean bowl until stiff peaks form.
  • Whisk 3 egg yolks into the chocolate mix until combined.
  • Gently fold the egg whites into the chocolate mix. Start by folding in one spoonful to loosen the mix, then fold in the rest until fully incorporated.
  • Place the mousse in the refrigerator to set overnight or a minimum of 10 hours.
  • The next day, spoon the mousse over the cold cake. The cake naturally falls during baking, which creates a nice crater for the mousse.
  • Once the mousse is on top of the cake, store it in the refrigerator for up to 3 days.
  • Optional: decorate the cake with colorful fruit on top.

ESPRESSO CHOCOLATE MOUSSE WITH ORANGE MASCARPONE WHIPPED CREAM

Espresso Chocolate Mousse with Orange Mascarpone Whipped Cream image

Provided by Giada De Laurentiis

Categories     dessert

Time 3h10m

Yield 4 servings

Number Of Ingredients 10

1/2 cup whole milk
3 tablespoons sugar
1/4 teaspoon instant espresso powder
1 cup bittersweet chocolate chips
3 large egg whites
1/4 cup mascarpone cheese, room temperature
2 tablespoons fresh squeezed orange juice
1/2 cup whipping cream
2 tablespoons powdered sugar
1 teaspoon orange zest

Steps:

  • For the Mousse: In a small saucepan over medium heat stir together the milk with the sugar and the espresso powder until the milk is hot, but not boiling, and the sugar is dissolved. Place the chocolate chips in a blender.
  • *Pour the hot milk over the chips. Run the blender on high until combined, a few seconds. Add the egg whites and run the blender on high until light, about 1 minute. Transfer the mousse to 4 small serving cups. Cover with plastic wrap and place in the refrigerator until firm, about 3 hours.
  • For the Cream: In the bowl of an electric mixer, stir together the
  • mascarpone cheese and the orange juice until smooth. Add the cream,
  • powdered sugar, and orange zest. Whip until the cream has soft peaks, about 1 minute. Whip the cream just before serving the mousse or cover with plastic wrap and place in the refrigerator until ready to serve.
  • * When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

1/4 cup fresh lime juice, (2 to 3 limes)
6 tablespoons unsalted butter
1 cup heavy cream, chilled
1 teaspoon ground cinnamon
1 lime, halved lengthwise and thinly sliced into half-moons
1 navel orange, halved lengthwise and thinly sliced into half-moons

Steps:

  • Make citrus curd. Prepare an ice-water bath; set aside. Cook egg yolks, egg, 3/4 cup sugar, and juices in a medium saucepan over medium heat, whisking constantly (be sure to reach sides and bottom of pan) until thickened, 5 to 7 minutes. Remove from heat.
  • Whisk in butter 1 tablespoon at a time. Set pan in ice-water bath; whisk until cool, about 5 minutes. Pass curd through a sieve into a medium bowl. Press plastic wrap directly onto surface to prevent a skin from forming. Refrigerate until set, 30 to 45 minutes. Whisk cream and 2 tablespoons sugar until stiff peaks form; refrigerate.
  • Whisk one-third of whipped cream into curd. Gently fold in remaining whipped cream. Divide among serving bowls; refrigerate until ready to serve. Dust with cinnamon; garnish with citrus.

ORANGE MOUSSE PIE

Orange Mousse Pie image

So creamy and delicious! Like a dream-sicle in a slice of pie!

Provided by Terrie Hoelscher

Categories     Pies

Time 2h30m

Number Of Ingredients 12

CRUST
1 refrigerated pie crust [from a 15-oz box], softened to room temp
FILLING
1 env. unflavored gelatin
3/4 c orange juice
1 pkg [8-oz] cream cheese
1 c powdered sugar
1 tsp grated orange zest [only the orange part of the peel, not the white, pithy part]
12 oz lite or sugar-free cool whip, thawed
1 can(s) mandarin oranges, 12 oz.
save your orange peel, to make curls out of the peel for garnish!
TIP: CAN USE TWO LARGE ORANGES, PEELED, SEEDED, JUICED AND COARSELY CHOPPED, IN PLACE OF THE PRE-MADE ORANGE JUICE AND CANNED MANDARIN ORANGES.

Steps:

  • 1. Heat oven to 450°. Once you have softened one pie crust according to package directions and placed into a 9" glass pie plate, bake crust for 15 minutes. Use a pie crust weight (I use white rice, poured into foil, to loosely line the crust), or prick the pie crust, so it doesn't bow up while baking. COOL COMPLETELY. Also make sure the pie plate itself is completely cool, so the heat doesn't merge up thru the crust and is then trapped under the filling once you pour it in. It will ruin your crust, if it's not completely cool.
  • 2. In a 1-qt. saucepan, mix unflavored gelatin and orange juice. Allow to stand for 1 - 2 minutes.
  • 3. Meanwhile, in a small bowl, beat the cream cheese, powdered sugar and orange zest with an electric mixer on med. speed, until smooth and fluffy. Set aside.
  • 4. After gelatin/orange juice have stood to soften for a couple of minutes, cook over med. heat, until gelatin is dissolved. Remove from heat. Set aside to cool. NOTE: at this point, I set the pan of hot gelatin/orange juice into an ice-water bath, and stir it every couple of minutes, so it will not be too hot when I pour it into the cream cheese mixture, in step 5.
  • 5. After the softened/cooked gelatin & orange juice mixture is somewhat cooled (tepid to the touch), blend it into the cream cheese mixture, using the hand mixer. Refrigerate until slightly thickened, about 10 mins.
  • 6. Fold the thawed cool whip into the orange mixture; gently fold in chopped oranges, making sure to mix it well.
  • 7. Spoon all of this into the COMPLETELY COOLED crust.
  • 8. Refrigerate until firm, about an hour, or more, if necessary. Garnish with orange peel curls (optional).

Time 10m

Number Of Ingredients 5

4 Orange Milano cookies (I used Pepperidge Farm)
1 3/4 c whipping cream
1/4 c orange juice
1 box instant cheesecake pudding and pie filling; 3.4 ounce
2 Tbsp plus 2 teaspoons hot fudge sauce, room temperature

Steps:

  • 1. Place cookies into a small resealable plastic bag. Using a mallet or rolling pin, crush cookies; set aside.
  • 2. In a large chilled bowl, place the whipping cream, orange juice and cheesecake pudding and pie filling. Using a hand mixer, beat slowly until combined, about 30 seconds.
  • 3. Increase speed to high and beat until stiff peaks form, about 1 minute to 1 1/2 minutes. Scraping bowl occasionally.
  • 4. Using 2 (8-ounce) martini glasses (or parfait glasses), begin layering the parfaits. Place about 1/2 tablespoon of the crushed cookies into the bottom of the glasses.
  • 5. Top with 1 teaspoon fudge sauce.
  • 6. Top with 1/3 cup cheesecake mixture.
  • 7. Then 1 tablespoon crushed cookies.
  • 8. Next, 1 tablespoon of the fudge.
  • 9. Add 2/3 cup cheesecake mixture, then remaining crushed cookies.
  • 10. Can be eaten immediately or refrigerate until ready to serve.

Tips:

  • To make the orange mousse extra creamy, use full-fat ingredients such as heavy cream and cream cheese.
  • If you don't have orange zest, you can use 1/2 teaspoon of orange extract instead.
  • Be sure to chill the orange mousse for at least 2 hours before serving, to allow it to set properly.
  • Garnish the orange mousse with fresh orange segments, whipped cream, or a sprinkle of grated chocolate for a touch of elegance.
  • For a vegan orange mousse, use silken tofu instead of cream cheese, and coconut cream instead of heavy cream.

Conclusion:

Orange mousse is a light, fluffy, and refreshing dessert that is perfect for any occasion. With its bright citrus flavor and creamy texture, it is sure to please everyone at the table. Whether you are looking for a simple and elegant dessert or a more elaborate creation, there is an orange mousse recipe out there to suit your needs.
