ORECCHIETTE WITH FRESH TOMATOES AND SAUSAGE

Orecchiette with Fresh Tomatoes and Sausage image

It's one of those dishes I always come back to for more. Best thing is, there is room to tweak it a bit to suit your style. The type of sausage you use will greatly affect the taste of the whole dish. I'm partial to Sicilian-style chicken sausage for this recipe. Garnish each bowl with Parmesan cheese.

Time 2h1m

Yield 8

Number Of Ingredients 14

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 small onion, minced
3 cloves garlic, minced
1 (4 ounce) package chopped pancetta
1 (12 ounce) package Italian chicken sausage (such as Trader Joe's® Chicken Sicilian Sausage)
⅓ cup red wine
1 (8 ounce) package crimini mushrooms, sliced
20 cherry tomatoes, halved, or more to taste
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
salt to taste
1 (16 ounce) package orecchiette pasta
1 cup chopped baby spinach

Steps:

  • Heat butter and oil in a large skillet over medium heat. Add onion and garlic; cook and stir until the onion starts to soften, about 2 minutes.
  • Increase heat to high and add pancetta to the skillet. Cook and stir until crispy, 3 to 5 minutes. Remove casings from the sausages; add sausage meat to skillet. Cook and stir until browned, 3 to 5 minutes. Pour in wine and scrape the bottom of the skillet.
  • Toss mushrooms into the skillet. Cook, stirring occasionally, until slightly softened, 5 to 10 minutes. Add tomatoes, basil, oregano, and salt. Stir to combine. Reduce heat to low; cover and simmer, stirring occasionally, until the sauce is thick, 1 to 2 hours.
  • Fill a large pot with salted water and bring to a rolling boil. Stir in orecchiette and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Reserve 1/2 cup of cooking water and drain without rinsing the pasta.
  • Stir spinach into the sauce in the skillet. Cook until wilted, about 1 minute. Toss pasta into the skillet and stir to combine everything. Stir until heated through, adding some reserved pasta water if the sauce seems too thick.

ORECCHIETTE WITH SHRIMP, PANCETTA AND FRESNO CHILES

Orecchiette with Shrimp, Pancetta and Fresno Chiles image

Provided by Geoffrey Zakarian

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 12

Kosher salt
1 pound orecchiette
2 tablespoons butter
8 ounces pancetta, cut into medium dice
1 tablespoon extra-virgin olive oil, plus more for drizzling
2 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
8 ounces large shrimp, peeled and deveined, tails removed, sliced lengthwise
2 small Fresno chile peppers, seeded and sliced into very thin rings
Zest of 1 lemon
1/2 cup freshly grated Pecorino Romano
1/2 cup roughly chopped fresh basil

Steps:

  • Bring a large pot of salted water to a boil. When the water is thoroughly boiling, add the pasta and cook according to the package directions until al dente.
  • Meanwhile, in a large skillet or shallow Dutch oven over medium-low heat, melt 1 tablespoon of the butter and cook the pancetta to render the fat and crisp it, about 8 minutes. Remove to a paper towel-lined plate to drain. Pour off and discard all but 1 tablespoon fat from the skillet. Raise the heat to medium and add the olive oil. When the oil is hot, add the garlic and red pepper flakes. Stir quickly and often so the garlic does not burn, 2 minutes at the most. Stir in the shrimp and continue to cook until just barely pink, another 2 to 3 minutes. Add the Fresno chiles, half of the lemon zest and the pancetta. The shrimp should be slightly undercooked.
  • Drain the pasta directly into the skillet and stir everything together, letting the shrimp finish cooking and the pasta absorb some of the sauce. Add the remaining zest, 1 tablespoon butter and a drizzle of olive oil. Remove from heat and add the cheese and basil. Do not stir. Serve immediately, family-style.

TASTY SHRIMP WITH ORECCHIETTE PASTA

Tasty Shrimp With Orecchiette Pasta image

My family loves this dish and the presentation is beautiful, but it isn't hard to prepare. I recommend using Orecchiette pasta as it is the perfect shape/size/flavor to compliment the shrimp and soak up the sauces. This recipe was adapted from a dish prepared at the HEB (Texas grocery store). They have a chef that prepares simple fresh food using expensive pre-prepared sauces. So, instead of paying $9.00 for a small jar of garlic-olive oil dipping sauce, I figured out how to make my own and I like it even better as I thought their version was too oily and not flavorful enough. It also tastes good reheated the next day for lunch (and you can really impress your coworkers as it looks/smells/tastes like it came from a fancy restaurant). I like to serve this dish with steamed broccoli and baby carrots for a very colorful plate.

ORECCHIETTE WITH PANCETTA AND BROCCOLI

Orecchiette with Pancetta and Broccoli image

Provided by Maggie Ruggiero

Categories     Pasta     Quick & Easy     Bacon     Pine Nut     Broccoli     Gourmet

Yield Makes 4 servings

Number Of Ingredients 9

3/4 pounds orecchiette
2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
1 garlic clove, smashed
3 tablespoons pine nuts
3 ounces sliced pancetta, coarsely chopped
5 scallions, thinly sliced
10 ounces frozen chopped broccoli, thawed, drained, and patted dry
Accompaniment: grated parmesan

Steps:

  • Cook orecchiette in a pasta pot of boiling salted water (2 tablespoons salt for 6 quarts water) until al dente.
  • While pasta cooks, heat butter and oil with garlic in a 12-inch heavy skillet over medium-high heat until garlic starts to sizzle. Add nuts and cook, stirring, until pale golden. Discard garlic and stir in pancetta and scallions, then cook 1 minute. Stir in broccoli and 1/4 teaspoon each of salt and pepper and cook over high heat, stirring, 4 minutes.
  • Reserve 1/2 cup pasta-cooking water, then drain pasta and stir into broccoli mixture. Add some of reserved water to moisten if needed.

Tips:

  • Mise en place: Before you start cooking, prepare all your ingredients and have them ready to go. This will make the cooking process much smoother and faster.
  • Cook orecchiette pasta al dente: Orecchiette pasta should be cooked al dente, meaning it should have a slight bite to it. Cook it according to the package instructions, or taste it as it cooks to determine when it is done.
  • Use high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. Use fresh, seasonal vegetables, high-quality seafood, and good-quality cheese.
  • Don't overcrowd the pan: When cooking the shrimp and pancetta, don't overcrowd the pan. This will prevent the food from cooking evenly and will result in steamed rather than sautéed food.
  • Add the pasta water: When adding the pasta water to the sauce, do it gradually. This will help to prevent the sauce from curdling.
  • Season to taste: Always taste your dish before serving and adjust the seasoning as needed. Add more salt, pepper, or other spices to taste.
