1 pound Bertolli dried Orrechiette pasta
1 teaspoon unsalted butter
1/4 cup (best quality) garlic-flavored olive oil
1/3 cup Madeira wine
1 cup golden raisins
2 sweet (Vidalia, Maui, etc.) onions
1 cup arugula, stems removed and chopped
1/2 cup toasted pine nuts
1/2 teaspoon sea salt
1/4 teaspoon ground white pepper
1/2 cup chicken broth
shaved Parmigiano-Reggiano

Steps:

  • Bring a large pasta pot full of water to boil. Cook pasta al dente (soft but still firm to the bite). Drain then return pasta to pot stirring in butter to prevent pasta from sticking. In a small saucepan, heat maderia (low heat), then add raisins. Remove from heat and allow raisins to plump for 8 minutes, drain. Peel onions, cut in half then slice thin. Heat olive oil (medium-high heat)in a 12" skillet and saute onions for 4-5 minutes, stirring occasionally. 6 tablespoons olive oil
1 1/4 lbs onions, thinly sliced
2 cups whipping cream
1 (8 ounce) bottle clam juice
3 tablespoons prepared white horseradish
12 ounces bunch broccoli rabe (also called rapini)
12 ounces orecchiette (little ear-shaped pasta)
1 cup grated parmesan cheese (about 3 ounces)
24 ounces salmon fillets, with skin

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat.
  • Add onions and saute until deep golden brown, about 28 minutes.
  • Set aside.
  • Boil cream and clam juice in heavy large saucepan until reduced to 1 cup, about 15 minutes.
  • Remove from heat.
  • Whisk in horseradish.
  • Season sauce to taste with salt and pepper.

  • Drain, reserving 1 cup cooking liquid.
  • Return pasta to same pot.
  • Add 2 tablespoons oil, caramelized onions, broccoli rabe, Parmesan cheese, and 3/4 cup reserved cooking liquid.
  • Toss pasta mixture over medium-high heat until heated through, adding remaining reserved cooking liquid if pasta is dry, about 5 minutes.
