⅔ cup uncooked orzo pasta
¼ cup mayonnaise
¼ cup sour cream
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 tablespoon yellow mustard
2 tablespoons chopped fresh chives
½ teaspoon white sugar
½ teaspoon black pepper
¼ teaspoon salt
1 ½ cups chopped fully cooked ham
1 cup diced red onion
½ cup chopped green bell pepper
½ cup halved cherry or grape tomatoes

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the orzo, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain and rinse with cold water in a colander set in the sink.
  • Whisk together the mayonnaise, sour cream, cider vinegar, Dijon and yellow mustard, chives, sugar, black pepper, and salt in a bowl.

1/2 pound sliced ham, coarsely chopped (2 cups)
1/2 pound mild soft goat cheese, crumbled
5 scallions, thinly sliced

Steps:

  • Preheat broiler and lightly oil a flameproof 3-quart shallow baking dish (2 inches deep).
  • Cook orzo in a 6-quart pot of boiling salted water until al dente. Reserve 3/4 cup pasta cooking water, then drain orzo in a colander. Toss hot orzo with remaining ingredients, reserved cooking water, and salt and pepper to taste in a large bowl until cheese is melted.
  • Transfer orzo mixture to baking dish and broil 2 inches from heat until lightly browned, about 4 minutes.

1 small butternut squash, peeled and cut into a 1/2-inch dice (about 4 cups)
6 tablespoons olive oil
1 pound orzo
2 tablespoons red wine vinegar
1 tablespoon honey
Zest and juice of 1 lemon
1/2 cup dried cranberries
1/2 cup sliced almonds
2 tablespoons fresh dill, chopped
4 scallions, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment. Bring a large pot of salted water to a boil.
  • Toss the butternut squash with 2 tablespoons of the olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Spread the squash into a single layer on the prepared baking sheet. Bake until the squash is tender, 15 to 20 minutes. Set aside to cool.
  • While the squash is cooking, cook the orzo in the boiling water according to the package instructions. Drain, rinse with cold water and set aside.

2 tablespoons olive oil
1 large shallot, finely chopped
1 garlic clove, minced
1/2 lb smoked ham, cubed
1 1/4 cups half-and-half
1 cup frozen peas, thawed
3/4 cup parmesan cheese, grated
salt & freshly ground black pepper

Steps:

  • Bring a heavy large saucepan of salted water to a boil over high heat. Add the orzo and cook until tender,about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
