Number Of Ingredients 11

8 ounces cremini mushrooms, thinly sliced
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 large leek (white and light green parts only), sliced and rinsed
2 cloves garlic, minced
12 ounces orzo
3 cups milk
1 1/2 cups shredded Italian cheese blend (about 6 ounces)
1 5-ounce package baby spinach (about 8 cups)

This rice and orzo recipe is very mildly seasoned. I didn't add any salt to the recipe as the salt content in different brands varies greatly; taste and adjust accordingly.

ORZO PILAF WITH MUSHROOMS, LEEKS AND SUN-DRIED TOMATOES

Orzo Pilaf with Mushrooms, Leeks and Sun-Dried Tomatoes image

Categories     Mushroom     Onion     Pasta     Tomato     Side     Bake     Sauté     Basil     Leek     Fall     Bon Appétit

Yield Makes 8 servings

Number Of Ingredients 10

Nonstick vegetable oil spray
1 1/2 cups canned low-salt chicken broth
1/3 cup chopped sun-dried tomatoes (not packed in oil)
1 tablespoon olive oil
12 ounces portobello mushrooms, stemmed, diced
3 cups sliced leeks (white and pale green parts only)
1 tablespoon chopped garlic
4 cups freshly cooked orzo (rice-shaped pasta; about 1 1/3 cups uncooked)
1/4 cup chopped fresh basil or 1 tablespoon dried
2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 350°F. Spray 8 x 8 x 2-inch glass baking dish with nonstick spray. Bring broth and tomatoes just to boil in heavy small saucepan. Remove from heat; let stand 10 minutes.
  • Meanwhile, heat oil in large nonstick skillet over medium heat. Add mushrooms, leeks and garlic. Cover skillet and cook until vegetables are tender, stirring occasionally, about 12 minutes. Remove from heat. Mix in cooked orzo, basil, vinegar, tomatoes and broth. Season with salt and pepper. Transfer to prepared dish; cover with foil.
  • Bake pilaf until heated through, about 40 minutes. Serve hot.

Tips:

  • For the best flavor, use a combination of fresh and dried mushrooms. The fresh mushrooms will add a delicate flavor, while the dried mushrooms will add a richer, more robust flavor.
  • If you don't have any dried mushrooms on hand, you can substitute 1 tablespoon of dried porcini powder for every 1/2 cup of fresh mushrooms.
  • To make sure the orzo is cooked evenly, stir it frequently while it is cooking.
  • You can also add other vegetables to this dish, such as chopped carrots, celery, or bell peppers.
  • If you want a vegetarian version of this dish, you can omit the chicken broth and use vegetable broth instead.

Conclusion:

Orzo pilaf with mushrooms is a delicious and versatile dish that can be served as a main course or a side dish. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a quick and easy meal, give this recipe a try!
