OVEN BAKED CHICKEN (OR PORK) FAJITAS

Oven Baked Chicken (Or Pork) Fajitas image

Another awesome Pinterest find! Instead of using the mentioned spices, I just added a packet of fajita seasoning. The original recipe calls for chicken, but I used pork and it was still good (I haven't tried beef because I'm afraid it would get tough). I couldn't tell the difference between these and skillet fajitas. I served them with whole-wheat tortillas, low-fat sour cream, salsa, black beans, corn and cooked brown rice. Enjoy!

Tips:

  • Marinate the chicken or pork: This will help to tenderize the meat and infuse it with flavor. You can use a variety of marinades, such as a simple mixture of olive oil, lime juice, garlic, and cumin, or a more complex marinade with ingredients like yogurt, chili powder, and honey.
  • Use a hot skillet: This will help to sear the meat and prevent it from sticking. When the skillet is hot, add the marinated chicken or pork and cook over high heat for 5-7 minutes per side, or until cooked through.
  • Add your favorite vegetables: Fajitas are a great way to get your daily dose of vegetables. Some popular vegetables to add to fajitas include bell peppers, onions, zucchini, and squash. You can also add mushrooms, corn, or black beans.
  • Serve with your favorite toppings: Fajitas are typically served with a variety of toppings, such as shredded cheese, sour cream, guacamole, and salsa. You can also add other toppings, such as Pico de Gallo, diced tomatoes, or sliced avocado.

Conclusion:

Oven-baked chicken or pork fajitas are a quick and easy meal that is perfect for a weeknight dinner. They are also a great way to get your daily dose of vegetables. With a few simple ingredients and a little bit of prep time, you can have a delicious and healthy meal on the table in no time.
