OVEN PORK CHOPS WITH HOMINY

Oven Pork Chops With Hominy image

The original recipe was from cooks.com. Posted in response to a request in the forums. I rewrote the recipe to clarify the instructions. I would omit the salt as the soup and hominy should provide enough.

2 tablespoons extra-virgin olive oil
7 cloves garlic (1 finely grated, 6 smashed)
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
4 bone-in, center-cut pork chops (3/4 to 1 inch thick; 10 ounces each)
Kosher salt and freshly ground pepper

Tips:

  • Choose high-quality pork chops for the best results. Look for chops that are evenly marbled and have a good amount of fat.
  • Brine the pork chops for at least 30 minutes before cooking. This will help to tenderize the meat and keep it moist.
  • Sear the pork chops in a hot skillet before baking them in the oven. This will help to create a flavorful crust.
  • Cook the pork chops to an internal temperature of 145 degrees Fahrenheit for medium-rare, 150 degrees Fahrenheit for medium, or 155 degrees Fahrenheit for medium-well.
  • Let the pork chops rest for a few minutes before serving. This will help to redistribute the juices and make the meat more tender.

Conclusion:

Pork chops and hominy are a classic combination that is both delicious and easy to make. These oven-baked pork chops are tender and juicy, and the hominy is creamy and flavorful. This dish is perfect for a weeknight meal or a special occasion. Serve it with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
