ROASTED SUMMER VEGETABLES
Steps:
- Preheat the oven to 375 degrees F.
- Trim the ends of the zucchinis and cut them diagonally in 3/4-inch-thick slices. (The slices will seem large, but they¿ll shrink while they cook.) Cut the peppers lengthwise in 1 1/2-inch-wide slices, discarding the core. Trim off the fennel stalks and cut the bulb through the core in 1-inch wedges. (Cutting through the core keeps the pieces intact.) Peel the onion and slice it in 1/4-inch-thick rounds, leaving the slices intact.
- Place the vegetables in groups on a sheet pan. Drizzle with the olive oil, add the garlic, and toss gently to be sure the vegetables are lightly coated with oil. Spread the vegetables in one layer on 2 sheet pans. (If they¿re crowded, they¿ll steam rather than roast.) Sprinkle with the salt and pepper and place the thyme sprigs on top. Roast for 15 minutes. Turn each piece and put the pans back in the oven for 5 to 10 minutes, until all the vegetables are crisp-tender. Sprinkle with extra salt and serve hot or at room temperature.

Tips:
- Choose Fresh, Vibrant Vegetables: Opt for vegetables that are in season and at their peak flavor. Look for colorful and crisp produce.
- Trim and Cut Vegetables Evenly: Cut vegetables into uniform sizes to ensure even cooking. Smaller pieces will cook faster, so adjust the cutting size accordingly.
- Toss Vegetables in Oil and Seasonings: Coating the vegetables in oil helps them roast evenly and prevents them from drying out. Use a flavorful oil like olive oil or avocado oil. Season vegetables generously with salt, pepper, and herbs like thyme, rosemary, or oregano for added flavor.
- Roast Vegetables at High Temperature: High heat helps caramelize the vegetables, resulting in a slightly crispy exterior and tender interior. Aim for a temperature between 400°F and 450°F.
- Roast Vegetables in a Single Layer: Avoid overcrowding the pan to ensure even cooking. Spread the vegetables in a single layer on a sheet pan, making sure they are not touching each other.
- Roast Vegetables Until Tender-Crisp: Keep an eye on the vegetables while they roast. They should be tender when pierced with a fork, but still slightly firm to retain some of their texture.
- Season Vegetables After Roasting: Once the vegetables are roasted, transfer them to a serving bowl and season with additional salt, pepper, and herbs if desired. You can also drizzle them with balsamic vinegar, olive oil, or a squeeze of lemon juice for extra flavor.
Conclusion:
Roasting vegetables in the oven is a simple yet versatile cooking method that brings out their natural sweetness and flavors. Follow these tips to achieve perfectly roasted vegetables every time. Experiment with different vegetable combinations, seasonings, and roasting times to create a variety of delicious and healthy side dishes or main courses. Enjoy the vibrant colors and textures of roasted vegetables, and let them be a staple in your weekly meals.
