I found this recipe off a diabetic website and changed it a bit. Feel free to use all sugar or sugar substitutes. You can add just about any fruit you want to this. Cook time does not include the chilling overnight. :)

Time 35m

Yield 6 bars, 4-6 serving(s)

Number Of Ingredients 14

1/2 cup unsweetened applesauce
2 tablespoons granulated sugar
1 tablespoon Splenda brown sugar blend
1/4 cup liquid egg substitute or 1 egg
1 1/2 cups skim milk
1 teaspoon baking powder
1 pinch salt
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1 1/2 cups quick-cooking oats
1/2 cup dried cranberries (loosely packed) or 1/2 cup raisins (loosely packed)
1 bananas or 1 apple, chopped
1/4 cup chopped walnuts (optional) or 1/4 cup almonds (optional)
cooking spray

Steps:

  • Combine applesauce, Sugar, brown sugar, egg substitute, milk, baking powder, salt, cinnamon, and vanilla extract in a bowl; whisk well.
  • Stir in oats, cranberries or raisins, and fruit. Add nuts if using.
  • Coat an 8" x 8" baking pan with cooking spray.
  • Spoon in oatmeal mixture and spread evenly in pan.
  • Cover with plastic wrap and refrigerate for 7-8 hours.
  • Preheat oven to 350°F
  • Uncover and bake oatmeal for approximately 20-25 minutes, or until set. (Oatmeal is set if it stays in place when the pan is tilted.)
  • Cut into bars.
  • Serve warm, alone, or sprinkled with walnuts and drizzled with sugar-free maple-flavored syrup or milk.
  • Refrigerate leftovers. Reheats well in the microwave.

Tips:

  • Use a variety of oats. Old-fashioned oats, steel-cut oats, and quick-cooking oats can all be used in overnight oatmeal bakes. Old-fashioned oats provide a chewy texture, while steel-cut oats are more hearty and nutty. Quick-cooking oats cook more quickly, making them a good option for busy mornings.
  • Experiment with different flavors. Add your favorite fruits, nuts, seeds, and spices to the oatmeal bake. Some popular additions include blueberries, strawberries, bananas, apples, walnuts, almonds, chia seeds, and flax seeds. You can also add a sweetener, such as honey, maple syrup, or brown sugar, to taste.
  • Make it a complete meal. Add a source of protein, such as yogurt, milk, or eggs, to the oatmeal bake. You can also add a source of healthy fats, such as avocado or olive oil. This will help to make the oatmeal bake more filling and satisfying.
  • Bake the oatmeal until it is golden brown. This will ensure that the oatmeal is cooked through and has a slightly crispy texture on top.

Conclusion:

Overnight oatmeal bakes are a delicious and convenient breakfast option. They are easy to make and can be customized to your liking. With a little creativity, you can create an oatmeal bake that is both nutritious and satisfying. So next time you're looking for a quick and easy breakfast, give overnight oatmeal bake a try!
