A California-inspired sandwich made with slices of turkey, avocado, spinach and red onion-it's a fresh and satisfying lunch.

- Remove avocado flesh from avocado half; spread on one side of each slice of bread. Top 1 slice with spinach, turkey and onion; drizzle with lemon juice. Cover with remaining slice of bread, avocado side down.

This is from the June '07 GoodHousekeeping magazine. Simple, healthy, and delicious. I added some alfalfa sprouts to mine and only used half the amount of spinach leaves.

- Stir lemon peel into mayonaisse. Spread on both slices of bread.
