Everybody will enjoy a slice of this warm apple pie with a scoop of vanilla ice cream.

1 recipe Classic Pastry Crust for Two-Crust Pie (see Classic Pastry Crust recipe)
3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon Cinnamon
6 medium baking apples such as Braeburn or Granny Smith (or combination), peeled, cored and sliced (about 6 cups sliced)
1 lemon
1 tablespoon butter or margarine
1 tablespoon milk
2 teaspoons sugar (optional)

Steps:

  • Preheat oven to 400°F. Prepare crust as directed in Step 1. In Classic Batter Bowl, combine sugar, flour and cinnamon; mix well. Peel, core and slice apples using Apple Peeler/Corer/Slicer; cut apple slices in half. Using Zester/Scorer, zest lemon to measure 1 teaspoon zest. Juice lemon to measure 1 tablespoon juice. Add apples, lemon zest and juice to sugar mixture; toss gently to coat.Spoon apple mixture into pastry-lined Deep Dish Pie Plate; dot with butter.Using Creative Cutters, cut 4-5 shapes into top crust. Place crust over filling; seal and flute edges. Brush milk evenly over crust; sprinkle with sugar, if desired. Gently place Pie Crust Shield or 2- to 3-inch strips of aluminum foil over edge of pie. Bake 30 minutes; remove shield. Bake an additional 25-30 minutes or until crust is golden brown. Remove from oven; cool at least 3 hours.

1 package (15 ounces/450 g) refrigerated pie crusts
4 ounces (125 g) cream cheese, softened
1/4 cup (50 mL) firmly packed light brown sugar
1 egg
2 tablespoons (30 mL) all-purpose flour
1/2 teaspoon (2 mL) ground cinnamon
1/2 teaspoon (2 mL) vanilla extract
3 medium Granny Smith apples, peeled, sliced and chopped (3 cups)
3 tablespoons (45 mL) firmly packed light brown sugar
3 tablespoons (45 mL) all-purpose flour
2 tablespoons (30 mL) butter or margarine

Steps:

  • Preheat oven to 375°F. On lightly floured surface, roll one pie crust into 12 x 10-inch rectangle using Baker's Roller®. Cut 12 circles from dough using Cut-N-Seal®. Press into Deluxe Mini-Muffin Pan using Mini-Tart Shaper. Repeat with remaining pie crust.For apple filling, whisk cream cheese in Classic Batter Bowl until smooth. Whisk in sugar until fluffy. Mix in egg until well blended. Stir in flour, cinnamon and vanilla until smooth. Peel and slice apples using Apple Peeler/Corer/Slicer. Chop into small pieces using Food Chopper. Stir into cream cheese mixture.Fill prepared muffin cups with apple mixture, filling over top of pastry. For topping, combine 3 tablespoons brown sugar and 3 tablespoons flour. Cut in butter until forms coarse crumbs. Spoon over apple filling.Bake in preheated oven 18-20 minutes or until light golden brown. Let cool in pan 5 minutes. Remove from pan. PAMPERED CHEF STYLE APPLE CRISP (FOR MICROWAVE OR OVEN)

This is one of the recipes that was served at the very first Pampered Chef party I attended, back in 1994. It is a very easy recipe (the hardest part is prepping the apple slices) and can be made in either microwave or the oven. I have made it both ways and prefer the oven version, but it is awfully nice that this can also be tossed into the microwave for a last minute dessert on busy nights. The demonstrator had a handy tip for the apples: After she ran them through the apple peeler/slicer gizmo they sell, she dropped them into a bowl filled with a can of lemon-lime soda (like Sprite) - and then drained them and patted them dry before using in this recipe. This way the apples didn't turn all sludgy brown before she was ready to demonstrate the recipe itself. I am allowing a large amount of prep time for those of you who don't own one of the PC apple gizmos - once your apples are ready, it only takes about 5 minutes to prepare the crisp for baking.

8 graham cracker squares (2 1/2 inches each)
3/4 cup brown sugar, packed
1/2 cup rolled oats (such as Quaker old fashioned or quick oats, not instant)
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup sweet unsalted butter or 1/2 cup margarine, melted
whipped cream (optional) or ice cream, garnish (optional)

Steps:

  • You will need a 12" round stoneware baking pan for this recipe (such as the Pampered Chef deep dish baker).
  • Use enough apple slices to fill the stoneware pan 3/4s full (amount will vary depending upon your apples).
  • Finely chop the graham cracker squares and mix with oats,brown sugar,flour, and spices.
  • Add melted butter and mix well.

I've made this in a pie plate, but I've also made it in an 8x8 square pan and I've even doubled the recipe and made it in a 13x9 pan. It's very versatile and everyone who tries it loves it. It's the ONLY apple pie I like.

1 1/2 lb apples - peeled, cored and sliced (i use a mix, with at least 1 or 2 granny smith)
1 c sugar
1 c flour
3/4 c butter, melted
1 egg
1/4 c cinnamon sugar (approximately)
1 c walnut pieces, optional

  • 1. Preheat oven to 350 degrees F (175 degrees C).
  • 2. Toss apples with Cinnamon Sugar and Walnuts (if using), then pour into a pie plate.
