1/4 Cup Butter, at room temperature
1 Big Clove Garlic, finely minced
1/4 teaspoon chilli flakes
1/4 teaspoon Italian seasoning
1/4 teaspoon salt
8-10 crusty bread slices

Steps:

  • To the butter add in the aromatics. Finely minced garlic, Italian seasoning powder (any store bought variety would do fine), chilli flakes and salt.
  • Apply about a teaspoon of butter on each side of the bread slice.
  • Heat a griddle and place the buttered bread slices and toast on low-medium flame until the butter has melted and the toast is golden.
  • Serve hot!

2 cups bread flour
2⅓ cups all purpose flour
1 teaspoon salt
2¼ teaspoon quick rise or instant yeast
1½ teaspoon white sugar
1½ tablespoon garlic (minced)
1½ tablespoon olive oil (extra virgin)
1½ cups lukewarm water (+ 1 Tbsp. water (if dough is a bit dry))
1/2 cup butter (melted)
1 tablespoon garlic (pressed)
1/2 teaspoon sea salt

Steps:

  • Turn on 'bread proof' feature on oven (if available) or set oven to 170°F ( 77°C) to preheat
  • In the bowl of a stand mixer with dough hook attachment add bread flour, all purpose flour, salt, yeast, sugar, garlic, olive oil, water. Knead for 10 minutes.. Add 1 tablespoon of water if dough is a bit dry. Transfer dough to a greased bowl or add a dash of olive or vegetable oil to stand mixer bowl and coat dough ball. Cover bowl with plastic wrap.
  • Place bowl in the oven to proof for 1h. If oven was set to 170°F, turn off oven and leave door closed until proofing time is done.
  • In a small bowl, mix together melted butter, garlic and salt. Set aside.
  • Punch down dough and scrape out of bowl onto clean, flour dusted work surface. Knead dough for a few minutes and roll into even sized log.
  • Divide dough into 8 even pieces (approximately 3 or 4 inch pieces). Shape each dough piece into round ball. Heat a large non-stick pan on medium high heat.
  • Roll out dough ball into a disc with a diameter of approximately 7 inches.
  • Place rolled out disc into hot pan and pan fry for 1 to 2 minutes or until bubbles start to form. Brush garlic butter onto bubbled surface and flip bread. Brush garlic butter on surface and fry for another 1 to 2 minutes. Transfer naan to a cooling rack and allow to cool for 1 minute before serving.
  • Repeat steps 7 & 8 for the rest of the dough balls.

4 garlic cloves, peeled and smashed
4 tablespoons olive oil

Steps:

  • Brush the inside of a heavy pan with olive oil and place over medium-low heat.
  • Cut the loaf in half lengthwise, then again crossways into 3 or 4 inch pieces.
  • Rub the cut surfaces with the garlic and brush with oil.
  • Arrange as many pieces as will fit in the pan, weighing them down with a bacon press.
  • Cook about 5 minutes until underside of bread is browned.
  • Turn bread and repeat cooking process for another 5 minutes.
  • Repeat until all slices are browned.
  • Keep warm in the oven on low heat.

1 1/2 cups bread crumbs
1 clove garlic, smashed
2 tablespoons finely chopped flat-leaf parsley
2 tablespoons finely chopped fresh oregano leaves
Pinch crushed red pepper flakes
3 lemons, juiced and 1 lemon, zested and reserved
Kosher salt
1/2 cup Dijon mustard
4 (10 to 12-ounce) trout, boned, belly flap removed, rinsed and patted dry, heads and tails left on
Extra-virgin olive oil

Steps:

  • In a wide flat dish, combine the bread crumbs, garlic, parsley, oregano, red pepper flakes, zest of 1 lemon and salt, to taste.
  • In a small bowl, mix together the mustard and the juice of 1 lemon. Brush both sides of the trout with mustard mixture. Coat the fish on both sides with the seasoned bread crumbs and press firmly to adhere the crumbs to the fish.
  • Preheat the oven to 250 degrees F.
  • Coat a large skillet with about 1/4 to 1/2-inch of olive oil and bring to a medium-high heat. Add the fish to the pan, skin side down, and cook the fish 2/3's of the way, about 6 to 7 minutes. Carefully turn the fish over and cook the other side until the fish is brown and crispy, about 2 to 3 minutes. Remove the fish from the pan and drain on paper towels. You will probably need to work in batches to do 4 fish. After the first batch is done and dried on paper towels reserve it on a rack in a warm oven.
  • When all the fish has been fried, remove the oil and any brown bits from the pan. Add the butter and remaining lemon juice and swirl to combine as the butter melts. Season with salt, to taste, and reduce by about half. Transfer the fish to a serving platter, drizzle with the butter lemon sauce and serve.

4 teaspoons baking powder
2 cups flour
1 cup water
oil or lard (for frying)

Steps:

  • Mix flour and baking powder. Add water to make a soft dough. Pat dough out on a sheet of plastic wrap to about 1/2" thick.
  • Heat up about 1/4" of oil or lard to medium heat in a cast iron or non stick pan.
  • Cut dough into about 9 biscuits.
  • Fry on one side until brown. Flip and cook about 2-3 minutes more. Test for doneness by flaking the side of a biscuit with a fork. If it seems dry inside it is done.
