Nice, fresh-tasting dish that comes together in a snap. Make it even quicker by preparing the chile lime butter ahead of time. It can be made 1 day ahead, covered and chilled. Just make sure to bring to room temperature before using. I like this served atop jasmine rice. -adapted from Gourmet

Tips:

  • Choose the right tilapia fillets: Look for fillets that are firm and white, with no brown spots or discoloration. Avoid fillets that are too thin, as they will be more difficult to cook evenly.
  • Season the tilapia fillets liberally: Tilapia is a mild-flavored fish, so it's important to season it well before cooking. A simple mixture of salt, pepper, and garlic powder is a good place to start.
  • Don't overcrowd the pan: When pan-searing tilapia, it's important to not overcrowd the pan. This will prevent the fillets from cooking evenly and will also make it more difficult to flip them.
  • Cook the tilapia fillets over medium heat: Medium heat is ideal for pan-searing tilapia. This will help to prevent the fillets from burning or sticking to the pan.
  • Flip the tilapia fillets only once: Once the tilapia fillets are cooked halfway through, it's time to flip them. Use a spatula to carefully flip the fillets, being careful not to break them.
  • Baste the tilapia fillets with the chili-lime butter: As the tilapia fillets are cooking, baste them with the chili-lime butter. This will help to keep the fillets moist and flavorful.

Conclusion:

Pan-seared tilapia with chili-lime butter is a quick and easy recipe that's perfect for a weeknight meal. The tilapia fillets are cooked to perfection and the chili-lime butter adds a delicious flavor. Serve the tilapia fillets with your favorite sides, such as rice, vegetables, or salad.
