1 pound bulk Italian sausage
1 large sweet onion, chopped
3 garlic cloves, minced
1 tablespoon olive oil
1 can (28 ounces) diced tomatoes, undrained
1 can (6 ounces) Italian tomato paste
1/2 cup water
2 tablespoons minced fresh parsley
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
2 teaspoons dried basil
1 teaspoon salt
1/2 teaspoon Italian seasoning
1/4 teaspoon coarsely ground pepper
Hot cooked pasta of your choice

Steps:

  • In a large saucepan, cook the sausage, onion and garlic in oil over medium heat until meat is no longer pink; drain. , Stir in the tomatoes, tomato paste, water, parsley, brown sugar, vinegar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 1-1/2 hours or until flavors are blended. Serve with pasta. Freeze option: Freeze cooled sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

Growing up, Sunday meant "Pasta" in our home. But believe it or not, Papa never cared too much for the traditional italian "gravy" made with beef or pork. He developed this recipe and loved the lightness of this chicken sauce. So while my friends were having spagetti and meatballs; we were having shells and chicken! You get the benefits of two delicious meals in one; tender juicy chicken and peppers AND pasta sauce in one!

2 lbs frying chickens (cut up)
4 large sweet red peppers (cut into strips)
2 medium onions (sliced thin)
1 (28 ounce) can tomato puree
1 tablespoon canola oil
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons Italian parsley (chopped)
6 cloves fresh garlic (sliced thin)
2 teaspoons salt
1/2 teaspoon red pepper flakes

Steps:

  • Wash, cut up pieces of chicken; pat dry with paper towel.
  • Season with 1 tsp.
  • salt; set aside.
  • In a large saucepan, heat oil and saute onions and garlic.
  • Add chicken pieces skin-side down and brown lightly.
  • Add the sweet peppers, tomato puree, basil, oregano, parsley, salt and pepper flakes.
  • Cover and simmer over low- medium heat on the stovetop for 1-1/2 hour.
  • Note: Usually, tomato puree suggests adding a can of water.
  • In this recipe, the water comes from the cooking peppers and chicken which dilutes the puree without additional liquid.
  • However, if sauce becomes too thick during cooking, add 1/2 can of water (or wine) a little at a time until its consistency is to your liking.

2 tablespoons white sugar
1 ½ teaspoons dried basil
½ teaspoon fennel seed

¼ teaspoon ground black pepper

Steps:

  • In a large pot or Dutch oven over medium heat, cook the sausage, beef, onion, and garlic until well browned; drain fat. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. This is my dad's sauce. It tastes like Marinara with a pizazz. I love it. I only eat this and homemade marinara. Other than that, I don't like tomato sauce.

1 (28 ounce) can whole tomatoes
1 (5 ounce) can tomato paste
1/3 cup extra virgin olive oil
6 garlic cloves, minced
2 onions, diced
1/4 teaspoon crushed red pepper flakes
2 teaspoons italian seasoning
2 cups water
2 bay leaves
2 teaspoons salt
1/4 teaspoon black pepper
1/4 cup parsley

Steps:

  • Sauteed garlic in olive oil until golden brown, add onion and cook until translucent.
  • Add remaining ingredients and cook until it cooks down about an inch. About two hours.
  • My dad would add italian sausage and spare ribs and cook it for a couple hours. I like it without meat.
  • Serve over hot cooked pasta.
