I got this recipe for these delectable wheat crackers from a friend in Australia. It's become a standard for party canapes as well as a good snack by itself.

2 cups whole wheat flour
1 -2 cup parmesan cheese, grated fine
2 tablespoons fresh Italian parsley, minced
1 egg yolk
1/3-2/3 cup extra virgin olive oil
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees Farenheit or 180 celcius.
  • Line a baking pan with parchment paper.
  • Sift flour into a bowl.
  • Stir in Parmesan and parsley.
  • Add egg yolk, olive oil and 2 tablespoons water.
  • Stir well until combined.
  • Turn dough onto floured surface and knead until smooth.
  • Divide dough into two portions.
  • Roll out one portion between two sheets of parchment paper until it is 5 centimeters thick.
  • Use a 5 centimeter fluted cutter to cut out crackers.
  • (If you use a larger cutter, of course there'll be fewer crackers and you can determine how many you want to make.) Carefully place on the lined tray and bake for 20-25 minutes or until light golden brown.
  • Set aside for 10 minutes to cool on the tray before transfering to a wire rack to cool completely.
  • Repeat this process with the remaining portion of dough.

1/3 cup Ritz cracker (a generous handful)
3/4 cup parmigiano-reggiano cheese
1/3 cup flat leaf parsley
3 tablespoons chopped fresh chives
2 tablespoons fresh thyme leaves
1 tablespoon Old Bay Seasoning
1 teaspoon garlic powder (optional) or 1 teaspoon granulated garlic (optional)
flour, for coating
2 large eggs, beaten
splash heavy cream or half-and-half
extra-virgin olive oil, for frying (EVOO)
4 sole fillets or 4 tilapia fillets, rinsed and patted dry
salt and pepper
lemon wedge, for serving

Steps:

  • Using a food processor, grind the oyster crackers, Ritz crackers, parmigiano-reggiano, parsley, chives, thyme, Old Bay seasoning and garlic powder, if using. Transfer to a shallow bowl. Place the flour in another shallow bowl. In a third shallow bowl, beat the eggs and cream.
  • Fill a large skillet with enough EVOO to reach a depth of 1/4 inch and heat over medium-high heat. Preheat the oven to 200°. Season the fish fillets with salt and pepper. Coat the fish with the flour, shaking off any excess; coat with the egg mixture, then with the cracker crumbs. Working with 2 fillets at a time, fry the fish in the skillet, turning once, until deep golden, about 5 minutes. Transfer each batch to the oven to keep warm.

1 1/2 cups all-purpose flour, plus more for dusting
8 tablespoons (1 stick) unsalted butter, cut into 5 pieces
1/2 teaspoon table salt
1/2 cup freshly grated Parmesan cheese
5 tablespoons plus 1 teaspoon cold water
1 large egg yolk

Steps:

  • Preheat oven to 425 degrees. Line 2 baking sheets with parchment paper. In food processor, combine flour, butter, salt, and cheese. Pulse until mixture resembles coarse meal. Add the 5 tablespoons cold water; pulse until the dough just comes together. Shape dough into a disk.
  • In a small bowl, whisk together egg yolk and remaining 1 teaspoon cold water; set aside. On a lightly floured surface, roll dough 1/4 inch thick.   • In a mixer fitted with a paddle attachment, cream the butter until smooth and fluffy. Add the flour, cheese, and pepper and mix at low speed until blended. Form the dough into a disk, wrap it in plastic wrap, and refrigerate at least 2 hours. (The recipe can be made up to this point and kept refrigerated up to 2 days in advance.) Remove the dough from the refrigerator about 30 minutes before rolling out.
  • On well-floured parchment paper, roll out the dough into a rough rectangle, a little less than 1/4-inch thick. The dough will be somewhat delicate and may crack in places, but you can just push the edges together with your fingers. Carefully transfer the dough to the cookie sheet and prick evenly all over with a fork. Cut with a pizza cutter or a knife into 1 1/2-inch squares, making a grid.
  • Bake in a preheated 375 degree F oven, just until the crackers turn golden, 15 to 20 minutes. As they come out of the oven, run your pizza cutter or knife again along the grid to separate the crackers (the edges will have baked together a little bit in the oven). 1 1/2 cups finely grated fresh Parmesan (about 1/4 pound)
3/4 cup all-purpose flour
1 teaspoon freshly grated lemon zest
3/4 teaspoon coarsely ground black pepper plus additional for sprinkling the crackers
1/2 stick (1/4 cup) cold unsalted butter, cut into bits
1 tablespoon plus 2 teaspoons water
1 teaspoon fresh lemon juice

Steps:

  • In a bowl stir together the Parmesan, the flour, the zest, and 3/4 teaspoon of the pepper and with a pastry blender blend in the butter until the mixture resembles coarse meal. Make a well in the center, add the water and the lemon juice, and combine the mixture with fork until it just forms a dough. On a work surface knead the dough until it is just combined, transfer it to a sheet of wax paper, and using the wax paper as a guide form it into an 11- by 1 1/2-inch squared-off log. 25g grated parmesan
2 tbsp chopped parsley

4 skinless fillets of firm white fish
50g butter
juice of 1 lemon
