2 lbs small red potatoes (preferably new potatoes, skin on or off)

  • Melt butter in a large heavy saucepan over low heat.
  • Add in the chopped garlic and saute for about 1 minute.
  • Add in flour and whisk for 2 minutes (do not brown the flour).
  • Gradually add in the full-fat milk (or half and half if using) bring to a simmer whisking continously for 1 minute.
  • Add in the whipping cream; mix to combine, then add in the Parmesan cheese (sauce will be thick but will thin out slighty when you add in the peas and onions).
  • Season with salt and lots of pepper or cayenne pepper; simmer over low heat for about 7-8 minutes, stirring often.
  • Add in cooked potatoes, peas and onions; bring to a simmer and cook over low heat, stirring often with a wooden spoon until the onions are tender (about 5-6 minutes).

PENNE WITH PEAS, PEA GREENS AND PARMESAN

Penne With Peas, Pea Greens and Parmesan image

Many farmers who sell peas also sell the shoots and tendrils that grow with them. They're sweet, light and nourishing, especially when you serve them along with peas.

Provided by Martha Rose Shulman

Categories     dinner, weekday, pastas, main course

Time 20m

Yield 4 servings

Number Of Ingredients 9

1 pound fresh peas, shelled (about 3/4 cup)
6 ounces pea shoots (tendrils, shoots, leaves) (1/2 big bunch), curly tendrils removed and discarded
1 tablespoon extra virgin olive oil
1 bunch young spring onions or scallions, cleaned and finely chopped (about 1/2 cup)
Salt and freshly ground pepper
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh parsley
3/4 pound penne
1 to 2 ounces Parmesan, grated (1/4 to 1/2 cup, to taste)

Steps:

  • Begin heating a large pot of water for the pasta. Meanwhile, steam the peas over an inch of boiling water for 4 minutes, until just tender. Transfer to a bowl. Add the pea shoots to the steamer and steam 2 minutes, until just wilted. Remove from the heat and allow to cool until you can handle them. Do not discard the steaming water; pour it into a measuring cup. Squeeze out excess water from the pea greens and chop medium-fine. You should have about 1 cup chopped leaves and tender stems.
  • Heat the olive oil over medium heat in a large skillet and add the chopped spring onion or scallions. Cook, stirring, until wilted, about 3 minutes. Add the pea shoots and stir together for about a minute. Season to taste with salt and pepper. Add the peas, tarragon and parsley and about 1/4 cup of the steaming water and heat through.
  • When the water in the pot comes to a boil, salt generously and add the pasta. Cook al dente, using the timing instructions on the package as a guide but checking the pasta a minute before the time indicated is up. When the pasta is ready, using a ladle transfer 1/2 cup of the pasta cooking water to the pan with the peas and pea shoots. Drain the pasta and toss at once with the vegetables and Parmesan. Serve hot.

PRETTY PASTA SALAD WITH PEAS, PARMESAN AND HAM

Pretty Pasta Salad With Peas, Parmesan and Ham image

This is a wonderful pasta salad which I have been making for at least 15 years. In fact when I first moved to Greece and my mother visited me a year later, one of the first things she asked me was about how to make this recipe. I have made it for buffets and even for my engagement party and it tastes as good as it looks which is saying something! Enjoy.

RICE BALLS WITH BOLOGNESE SAUCE, PEAS, MOZZARELLA AND PARMESAN

Rice Balls with Bolognese Sauce, Peas, Mozzarella and Parmesan image

Provided by Antonia Lofaso

Time 2h30m

Yield 4 to 6 servings

Number Of Ingredients 26

1 tablespoon canola oil
1 pound ground beef
2 carrots, diced small
2 stalks celery, diced small
1/2 onion, diced small
3 tablespoons tomato paste
4 cups red wine
1 quart chicken stock
1 bunch fresh rosemary
1 1/2 cups fresh peas
Two 28-ounce cans San Marzano tomatoes
6 cloves garlic, minced
1 bunch fresh basil, chopped
1 bunch fresh parsley, chopped
Kosher salt
One 8-ounce box panko breadcrumbs
1/2 cup Parmesan cheese
1/2 cup chopped fresh parsley
4 cups arborio rice
4 eggs
1 pound grated Locatelli cheese
1 cup ricotta cheese
1 cup grated fresh mozzarella cheese
Peanut oil, for frying
Freshly grated Parmesan, for serving
Chopped fresh parsley, for serving

Steps:

  • For the meat sauce: Heat the oil in a large pan over medium-high heat. Add the ground beef and cook until browned. Remove the ground beef to a plate with a slotted spoon and set aside.
  • Add the carrots, celery, onion and tomato paste to the pan and cook for about 5 minutes. Then, add the cooked ground beef and red wine. Cook for another 10 minutes. Add the chicken stock and rosemary, bring to a simmer until the sauce has reduced, about 45 minutes. Fold in the peas.
  • For the tomato sauce: Blend the tomatoes in a blender or food processor. Add the tomatoes and garlic to a large pot. Tie the basil and parsley together in a bundle using kitchen string and add to the pot. Heat over medium heat, stirring occasionally, until the sauce is slightly thickened, about 15 minutes. Season with salt. Remove the herb bouquet.
  • For the breadcrumb mixture: Mix together the breadcrumbs, Parmesan and parsley in a bowl.
  • For the Arborio rice balls: Bring a large pot of water to a boil. Simmer the rice, covered, until the liquid has evaporated and the rice is cooked through, about 20 minutes. Remove from the heat and let stand for 5 minutes, then fluff the rice with a fork. Spread the rice out on a sheet tray to cool, until it is just slightly warm.
  • Put the cooled rice into a large bowl. Fold the eggs and the Locatelli cheese into the rice, being careful not to overwork and damage the rice.
  • Form some of the rice into a "cup" shape. Holding it in one hand, put some of the meat sauce inside the cup. Add some of the ricotta and fresh mozzarella, and a little more meat sauce. Make a second "cup" of rice and press it together with the filled cup. The rice ball should be about the size of a baseball. Continue with the remaining rice and filling.
  • Fill a heavy-bottomed saucepan with 6 inches of peanut oil and place over medium heat until it reaches 350 degrees F. Roll the rice balls in the breadcrumb mixture. Deep-fry until golden brown, 10 to 15 minutes.
  • Spoon the tomato sauce on the bottom of each plate. Place a rice ball in the center of the dish. Top with freshly grated Parmesan and parsley.

Time 30m

Yield 4 servings

Number Of Ingredients 14

6 ounces unsweetened shredded-wheat cereal (about 3 cups), crushed
2 teaspoons granulated garlic
2 teaspoons granulated onion
1 tablespoon kosher salt
2 teaspoons black pepper
1/4 cup canola oil
8 boneless, skinless chicken thighs (2 pounds)

Unsalted butter, to taste
Kosher salt, to taste
2 tablespoons unsalted butter
1 pound frozen peas
Kosher salt and black pepper
1/2 cup grated Parmesan

  • Meanwhile, cook egg noodles, according to package directions. Add butter and salt, to taste.
  • While the chicken and noodles cook, make the buttered peas: In a large skillet over medium heat, melt the butter. Increase the heat to medium-high, add the peas and season with salt and pepper. RICE SALAD WITH CHERRY TOMATOES, PARMESAN, PEAS, AND HAM

Rice Salad With Cherry Tomatoes, Parmesan, Peas, and Ham image

Taste the rice as it nears the end of its cooking time; it should be cooked through and toothsome, but not crunchy. Be careful not to overcook the rice or the grains will "blow out" and fray. Aromatic basmati rice works well in any of the rice salads, but regular long-grain rice works fine, too. From Cook's Illustrated

Provided by SweetSueAl

Categories     Long Grain Rice

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 12

1 1/2 cups long grain white rice or 1 1/2 cups basmati rice
1 1/2 teaspoons table salt
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 small garlic clove, minced (about 1/2 teaspoon)
1 teaspoon table salt
1/2 teaspoon ground black pepper
1/2 cup frozen peas, thawed
6 ounces cherry tomatoes, quartered and seeded (about 1 cup)
1 ounce deli ham, deli-style baked (thin-sliced or prosciutto, chopped fine, about 1/4 cup)
1 ounce parmesan cheese, shredded (about 1/4 cup)
1/4 cup fresh basil, shredded (fresh)

Steps:

  • For Boiled Rice:
  • Bring 4 quarts water to boil in large stockpot. Meanwhile, heat medium skillet over medium heat until hot, about 3 minutes; add rice and toast, stirring frequently, until faintly fragrant and some grains turn opaque, about 5 minutes.
  • Add salt to boiling water and stir in toasted rice. Return to boil and cook, uncovered, until rice is tender but not soft, 8 to 10 minutes for long-grain rice or about 15 minutes for basmati.
  • Meanwhile, line rimmed baking sheet with foil or parchment paper. Drain rice in large fine-mesh strainer or colander; spread on prepared baking sheet. Cool while preparing salad ingredients.
  • For Salad:
  • Stir together oil, vinegar, garlic, salt, and pepper in small bowl. Combine rice, peas, tomatoes, ham, Parmesan, and basil in large bowl; drizzle oil mixture over and toss thoroughly to combine.
  • Let stand 20 minutes to blend flavors and serve.

  • Heat butter in 12 inch nonstick skillet over medium-high heat; when foaming subsides, add onion and 3/4 teaspons salt and cook, stirring fruently, until onion has softened and is beginning to brown, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add orzo and cook, stirring freuently with heatproof rubber saptula, until most of orzo is lightly browned and golden, 5 to 6 minutes. Off heat, add vermouth and chicken broth. Return skillet to medium-high heat and bring to boil; reduce heat to medium low and simmer, stirring occasionally, until all liquid has been absorbed and orzo is tender, 10 to 15 minutes. With rubber spatula, stir in peas, Parmesan, nutmeg, and pepper to taste. Let stand off heat until peas are heated through, about 2 minutes; adjust seasoning with salt and serve.

Tips:

  • Choose fresh peas for the best flavor. Fresh peas are available in season from late spring to early summer. If you can't find fresh peas, frozen peas are a good substitute.
  • Parmesan cheese is a key ingredient in this dish, so use a good quality cheese. Freshly grated Parmesan cheese is best, but you can also use pre-grated cheese if you're short on time.
  • If you don't have heavy cream, you can use milk instead. However, the sauce will be thinner if you use milk.
  • To make the dish more flavorful, you can add a pinch of red pepper flakes or a teaspoon of dried thyme.
  • Serve the pasta immediately, topped with additional Parmesan cheese, if desired.

Conclusion:

Parmesan peas is a simple but delicious dish that can be made in just a few minutes. It's a great way to use up fresh peas, and it's also a good source of protein and fiber. Parmesan peas can be served as a main course or as a side dish. It's also a good option for a potluck or picnic.
