Tips:

  • Choose the right parsnips and carrots: Select firm, smooth parsnips and carrots without blemishes or bruises. For the best flavor, choose organic vegetables whenever possible.
  • Peel and chop the vegetables evenly: This will ensure that they cook evenly. If the vegetables are not peeled, scrub them thoroughly to remove any dirt or debris.
  • Use a good quality vegetable broth: This will add flavor to the puree. If you don't have vegetable broth on hand, you can use water, but the flavor will be less intense.
  • Don't overcook the vegetables: They should be tender but still have a bit of a bite. Overcooked vegetables will become mushy and теряют свой вкус.
  • Season the puree to taste: Add salt, pepper, and other seasonings to taste. You can also add a knob of butter or a drizzle of olive oil for extra richness.
  • Serve the puree immediately: Parsnip and carrot puree is best served fresh. If you need to make it ahead of time, store it in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
