GARLIC SCAPE PESTO
Garlic scapes, the curled flower from the top of a garlic plant, are abundant at farmers markets and CSAs (community supported agriculture shares) in spring and make an easy, fragrant pesto that can be spread on bread or crackers, put on pasta, used with fish, and as a substitute for garlic, onion, or scallions! Add to sandwiches, pasta, lamb, and fish dishes. Tastes great mixed with mayo.

Scapes are much milder than garlic & make a very tasty sauce to accompany your choice of pasta. The cooking time is for the pasta. Edit on July 17: I made this for the first time last night & found the garlic flavour overpowering! C.L.

Tips:
- Choose fresh garlic scapes: Look for vibrant green scapes with tight buds. Avoid any that are wilted or have brown spots.
- Prepare the scapes properly: Trim the tough ends of the scapes and remove any wilted or damaged parts. Finely chop or slice the scapes, depending on your preference.
- Use a generous amount of olive oil: Garlic scapes can easily burn, so be sure to use enough oil to prevent them from sticking to the pan.
- Cook the scapes over medium heat: This will allow them to soften and release their flavor without burning.
- Add the scapes towards the end of cooking: This will help them retain their bright green color and delicate flavor.
- Season to taste: Garlic scapes have a mild flavor, so feel free to add salt, pepper, and other seasonings to your taste.
Conclusion:
With their unique flavor and versatility, garlic scapes are a delicious and nutritious addition to a variety of dishes. Whether you're using them in pasta, stir-fries, soups, or salads, garlic scapes are sure to add a pop of flavor and color to your meals.
