250 g pasta (I prefer lasagna)
150 g mascarpone
150 g smoked salmon
1 tablespoon olive oil
1 tablespoon fresh dill, chopped
1/2 tablespoon fresh grated pepper

Steps:

  • Cook the pasta in boiled water until done.
  • Chop the salmon in big pieces.
  • Heat the olive oil and lightly cook the salmon for 2 minutes. Turn the heat to low and add the mascarpone cheese. When mascarpone is melted add the dill.Mix well.
  • Drain the pasta and add them into the sauce. Mix well.
  • Serve immediately and add the pepper on top!

There was a lot of kitchen improv involved in the making of this recipe! It works as a seafood dish or a pasta dish. It's served with a dilly sour cream sauce!

1 (8 ounce) package spaghetti
2 medium (blank)s lemon, juiced
salt and ground black pepper to taste
½ pound salmon fillet
1 tablespoon olive oil
1 (8 ounce) package fresh green beans, trimmed and halved
1 large shallot, minced
¼ cup sour cream
1 bunch chopped fresh dill
1 cup garden cress, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • While pasta cooks, pour enough water into a frying pan to cover salmon; add dill. Strain in lemon juice. Mix and season with salt and pepper. Add salmon to the pan and poach over medium-high heat, flipping as necessary, until it flakes easily with a fork, about 10 minutes. Remove the skin when you flip it the first time.
  • At the same time, heat olive oil in a pan over medium to medium-high heat. Saute green beans and shallots until the shallots start to brown and the green beans soften, 8 to 10 minutes.
  • Once the salmon is poached, use tongs to set it aside in a shallow bowl, but don't throw the poaching mixture away. Take about 1/4 cup of the poaching mixture and add it to a saucepan. Add sour cream and chopped dill and mix over medium heat until combined. Remove from heat and mix into pasta.
  • Place pasta on serving plates, along with some chunks of the salmon, plus some of the sauteed mixture. Try to get an even mix if possible. Sprinkle with garden cress. Serve immediately!

One more thing: if you go for the full-fat version you'll only need tiny portions because it's very heavy.

spaghetti
2 spring onions
1 tablespoon butter
125 g mascarpone
150 g sour cream
1 tablespoon Dijon mustard
salt
black pepper
1 orange, zest of
1 orange, juice of
200 g smoked salmon
200 g rocket or 200 g flat leaf parsley

Steps:

  • Chop spring onions and fry in butter.
  • Medium heat; add mascarpone and sour cream (low-fat version: replace with low-fat cream cheese and low-fat sour cream). Wait until it has melted and add mustard, salt, pepper, orange zest and juice (the amount of juice required varies; try it first with 1/2 orange, and add more if you want). Low heat, do not boil.
  • Cook the spaghetti (angel hair is also delicious), and meanwhile pull the salmon in small pieces. Retain a bit of spaghetti-water.
  • Immediately add the pasta to the sauce; you might need to add a bit of pasta-water.
  • Put pasta on plates and sprinkle salmon and rocket on top.

140g dried pasta , preferably wholemeal
85g frozen pea
85g frozen broad bean , podded if you like
100g broccoli , cut into small florets
100g cooked and peeled prawn
1 lemon , ½ zest and juice, ½ cut into wedges
3 tbsp light mascarpone
½ small bunch mint or basil leaves, shredded, plus a few whole leaves to serve

Steps:

  • Cook the pasta following pack instructions, adding the vegetables 4 mins before the end of the cooking time, and the prawns just as the cooking time is up. Reserve a mug of the water, then drain everything and tip back into the pan.
  • Tip in the lemon zest and juice, and the mascarpone, and heat through, adding enough of the pasta water to create a creamy sauce. Scatter in the shredded mint or basil, a good grinding of black pepper and a little salt. Divide between 2 warmed pasta bowls, scatter over the herb leaves and serve with lemon wedges.
