3 tablespoons sugar
3 cups sugar
3 teaspoons cinnamon
3 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cups vegetable oil
3 eggs
3 cups chopped apples (about 3 apples)
2 teaspoons vanilla extract
1 cup chopped pecans
1/2 cup raisins
prepared frosting, melted (from a can)

Steps:

  • Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
  • Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
  • Transfer to pan and then drop and shake the pan to release bubbles.
  • Bake 1 1/2 hours - 1 3/4 hours until toothpick comes out clean. Cool on rack 15 minutes, remove from pan and glaze.

1 cup mayonnaise
1 cup sharp cheddar cheese, grated

2 eggs, light beaten
2 cups crackers, crushed
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°F
  • Spray a 13 x 9 inch baking dish with cooking spray.

2 cups sugar, divided
1/2 cup water
8 tablespoons butter
1 1/2 cups self rising flour
1 1/2 cups milk

Steps:

  • Preheat oven to 350°.
  • Combine peaches, 1 cup of the sugar and water in a saucepan and mix well.
  • Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Remove from the heat.
  • Place butter in a deep baking dish and put in the oven to melt.
  • Mix remaining cup of sugar, flour and milk slowly to prevent clumping.
  • Pour mixture over melted butter.
  • DO NOT STIR!
  • Spoon fruit over top, gently pouring in syrup.

1 teaspoon pure vanilla extract
2 eggs
12 vanilla wafers
1 (21 ounce) can cherry pie filling (or whatever else suits your fancy) or 1 (21 ounce) can blueberry pie filling (or whatever else suits your fancy)

Steps:

  • Preheat oven to 350°F.
  • Place a paper cupcake liner in each cup (12 total) of muffin pan.
  • Beat cream cheese with electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, one at a time, beating well after each.
  • Place a vanilla wafer FLAT side down, in each muffin cup. Spoon cream cheese mixture over wafers filling each to about 1/4 inch from top of paper.
  • Bake for 20 minutes.
  • Allow tarts to cool completely before filling. When you remove the tarts from the oven, they will be puffed up, but as they cool, the center will sink, creating the perfect well to fill with a couple of spoonfuls of your favorite filling.
  • Chill thoroughly before serving.

I originally submitted this without trying it, as it was in response to a request. I finally got around to trying it last week, and realized there was a mistake, as the ingredients in the cake part should have read: 8 tablespoons butter, melted. Also, you can't "pour" the cake into the pan it has to be patted into the pan like a pie crust. Anyway, here is the revised version. I also cut down on the sugar, using about 12 ounces or 3/4 of the box. This is awesome-a Paula Deen classic!

1 egg
8 tablespoons butter, melted
1 (8 ounce) package cream cheese, softened

  • To make the cake: Combine all of the ingredients and mix well.

Steps:

  • Generously butter a 13 X 9 inch casserole dish;.
  • Mix the eggs, half and half, maple syrup,and sugar in a large bowl.
  • Place the bread slices in the prepared casserole dish and cover with the egg mixture: cover with plastic wrap and let soak overnight in refrigerator.
  • Preheat oven to 350 degrees; remove the casserole from refrigerator.

Note: The recipe calls for 1 round steak, it is necessary to have this steak cubed (tenderized) by the butcher. I used round steak, and pounded the life out of it, and it turned out fine, but I would recommend following Paula's suggestion and having the butcher do it!

1 teaspoon garlic powder
flour, for dusting
1/3 cup oil
2 garlic cloves, crushed
1 (14 1/2 ounce) can diced tomatoes
water
1 medium onion, cut into strips
1 medium green pepper, cut into strips

Steps:

  • Cut steak into serving sized pieces. Season, with salt, pepper, and garlic powder. Dust meat with flour.
  • In a dutch oven, heat oil and brown both sides of meat. Remove meat and drain excess oil.
  • Combine garlic cloves, tomatoes, onion, green pepper and one can full of water. Mix with steak drippings in pan.
  • Add steaks and cover. Simmer on low for 1 1/2 hours. Add extra water if needed to cover meat.
  • This can also be cooked in slow cooker.

It was an instant hit on the first day Paula Deen offered this dessert at The Lady & Sons, and remains so today. This delicious cobbler can be found on their dessert trays at both lunch and dinnertime. It's so easy to make you won't believe it! COOKS NOTES: If they are available by all means use fresh peaches. In a saucepan, mix two cups fresh peach slices with one cup sugar and one cup water. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, stirring occasionally. An almost equally good product is frozen peach slices. Simply follow the instructions for the fresh peach slices. NOTE: This is an adopted (late in 2006) recipe and there was already some discussion about the amount of butter necessary in reviews made previous to my inheriting this recipe: Now that I have made it myself, I can say that for me at least, 60 grams (1/4 cup) of butter was fine, (by all means use a little less if you prefer) and my dumplings didn't turn out doughy at all... what I DID mess up was using a larger can of peaches (non-metric sizes of canned fruit don't translate perfectly into metric ones), so I thought that the extra wouldn't matter much, mine was swimming rather a lot in the juice at the bottom and next time I will use all the peaches but only half or 3/4 of the juice from my metric sized can.. Taste was excellent and guests devoured it. I'm delighted to have inherited this recipe, so to both Paula Deen and the previous Zaar owner: Thanks for an excellent recipe !!!

1 cup sugar

1 (28 ounce) can peach slices in heavy syrup, undrained (or use fresh if available, see note)
cinnamon, for sprinkling (optional, use only with peach or apple cobbler)

  • Preheat oven to 350 degrees.
  • Place butter in oven in a 2-quart baking dish to melt.
  • Stir sugar and flour together and mix well. Slowly add milk and continue to stir to prevent the batter from lumping.
  • Being careful not to burn yourself, remove hot baking dish containing melted butter from oven; pour batter directly over butter in baking dish (DO NOT STIR).
  • Spoon fruit on top of batter, then gently pour syrup on top (DO NOT STIR). Sprinkle with cinnamon, if using. The most important part of this dish is not stirring the mixture.

4 slices bacon (I would double this amount)
1 3/4 lbs boneless skinless chicken breasts (about 3)
3/4 teaspoon pepper
1/2 teaspoon salt
2 tablespoons chicken broth
3/4 cup onion, chopped
5 garlic cloves, minced
2 cups heavy whipping cream (add more if you want it extra creamy)
1 1/2 cups parmesan cheese, shredded
3 tablespoons parsley, freshly chopped
16 ounces fettuccine pasta (cooked and kept warm)
1/4 cup water (reserved water from boiling pasta)

Steps:

  • Heat a large skillet over medium heat. Add bacon; cook until crisp. Remove bacon to paper towels to drain, reserving drippings in skillet. Crumble bacon and set aside.
  • Sprinkle chicken with salt and pepper. Brown chicken in drippings; add chicken broth. Cover and cook for 15 to 20 minutes or until cooked through. Remove chicken; shred meat.
  • Add onion and garlic to skillet; cook for 7 minutes over medium-high heat or until onion is tender. Add shredded chicken to skillet, and stir in cream; cook for 5 minutes or until thickened slightly. Remove from heat; add cheese and parsley, stirring until cheese melts.

This is now my go to pot roast. She has a version of this recipe in one cookbook for the oven and another in the slow cooker. Both are excellent.

1 (3 lb) boneless chuck roast
1 1/2 teaspoons house seasoning, recipe follows
1/4 cup vegetable oil
1 onion, thinly sliced
3 bay leaves
3 -4 beef bouillon cubes, crushed
2 garlic cloves, crushed
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup Chardonnay wine
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Sprinkle roast on all sides with house seasoning. Using a skillet over high heat, sear roast until brown in oil. Place roast in a slow cooker, and layer onions, bay leaves, crushed bouillon cubes, garlic, and cream of mushroom soup. Add the Chardonnay and cover with enough water to cover all of the ingredients. Cook on the low setting for 8 hours.
