My grandmother makes this every Christmas morning, and it's amazing. My husband hates eggs and he always has seconds, even my 1- and 2-year-old gobble this up. Perfect for breakfast, lunch, or dinner! Ingredients are forgiving; add your favorites or spice it up. Just make sure your veggies are not going to water it down.

1 pound sausage, casings removed
2 cups sliced fresh mushrooms
8 eggs, beaten
10 cups cubed, day-old bread
3 cups whole milk
2 cups shredded Cheddar cheese
1 ½ cups cubed Black Forest ham
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 tablespoons all-purpose flour
2 tablespoons mustard powder
1 teaspoon salt
2 teaspoons butter, melted
2 teaspoons dried basil

Steps:

  • Generously grease a 9x13-inch casserole dish.
  • Heat a skillet over medium heat; cook and stir sausage until crumbly and completely browned, about 10 minutes. Transfer cooked sausage to the prepared casserole dish.
  • Cook and stir mushrooms in the same skillet over medium heat until liquid has been released and mushrooms are lightly browned, 5 to 10 minutes; drain.
  • Mix mushrooms, eggs, bread, milk, Cheddar cheese, ham, spinach, flour, mustard powder, salt, butter, and basil together in a large bowl; pour over sausage. Cover casserole dish and refrigerate, 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until a knife inserted into the center of the strata comes out clean, 60 to 70 minutes.

1 (13 -16 ounce) French bread
8 large eggs
2 cups half-and-half (* Heavy Whipping Cream also works!*)
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 dash salt
maple syrup
1/2 lb butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
  • The next day, preheat oven to 350 degrees F.
  • Prepare the Praline Topping:.
  • Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.
  • Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden.
  • Serve with maple syrup.

I found this recipe in Paula Deen's magazine. It calls for Canadian bacon, but I didn't have any available and a run to the market is over 30 minute drive, so used regular bacon, crumbled. It still turned out to be delicious. I think it would be the perfect dish for just any meal, don't just use this for breakfast or brunch, it made a fantastic dinner. This needs to be made ahead as it needs to sit from 8 hours to overnight, so make it before leaving for work, and come home to an easy cook meal.

3 tablespoons butter
1 small onion, chopped
6 English muffins, cut in half
1 (8 ounce) container chive & onion cream cheese
1 (6 ounce) package sliced Canadian bacon, chopped
2 tomatoes, chopped
1 (12 ounce) jar roasted red peppers, drained and chopped
4 cups sharp cheddar cheese, shredded, divided
6 large eggs, lightly beaten
3 cups milk
3 tablespoons chives, fresh, chopped
1 teaspoon kosher salt

fresh tomato, slices and
fresh parsley

  • Lightly grease a 13x9x2-inch baking dish.

1 lb bacon (cut into 1/2 inch pieces)
1/2 lb cooked ham (cut into cubes or diced)
1 small onion (chopped)
10 -12 slices white bread (recipe originally said cubed but I left them whole)
2 cups cubed potatoes (I used Ore-Ida western style or can use O'Brien)
3 cups shredded cheese
10 large eggs
3 cups milk
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
salt and pepper

Steps:

  • The NIGHT BEFORE:.
  • In large skillet, cook bacon until crisp.
  • Drain off excess bacon fat, but keep a little in skillet in order to cook onion.
  • Add onion, ham and chopped bacon to skillet and cook until onion is tender and transparent.
  • Butter a large baking dish - I used a glass lasagna dish.
  • Layer the bread to cover bottom of dish - will use probably 5-6 slices or half the amount of bread cubed.
  • Add half of potatoes and cheese.
  • Top with bacon, onion and ham mixture.
  • Add remaining pieces of bread, potatoes and cheese.
  • In large bowl, beat eggs, milk, Worcestershire sauce, mustard, salt and pepper.
  • Pour this mixture evenly over the ingredients in baking dish.
  • Cover and chill OVERNIGHT in the refrigerator.
  • The NEXT MORNING:.
  • Remove strata from the refrigerator and bring to room temp (about 30 minutes prior to baking).
  • Preheat oven to 325°F.
  • Bake uncovered for 1 hour or when knife is inserted near center and comes out clean.

4 teaspoons olive oil
1 large onion, diced (about 2 cups)
3 garlic cloves, minced
3 cups sliced mushrooms
cooking spray
1 whole wheat baguette, crusts removed, cubed (about 5 cups)
8 eggs
8 egg whites
2 cups 1% low-fat milk
1 tablespoon Dijon mustard
10 ounces broccoli, steamed, cooled and chopped (or frozen, thawed)
1/3 cup grated parmesan cheese
1 cup shredded part-skim mozzarella cheese
1/2 cup thinly sliced sun-dried tomato, reconstituted
1 tablespoon minced fresh thyme leave
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • Heat 2 tsp oil in nonstick skillet over meduim heat.
  • Add onions and saute until translucent, about 4 minutes.
  • Add garlic and cook another 1 minute.
  • Transfer onion mixture to a medium bowl and let cool.
  • Heat remaining 2 tsp oil in the skillet and saute mushrooms until the release all their water, about 6-7 minutes. Remove from heat and cool completely.

  • Cover with plastic wrap and refrigerate overnight or at least 8 hours.

1 lb ground maple pork sausage
6 slices soft hearty white bread
8 ounces cheddar cheese, shredded
