MAMA'S BLACK-EYED PEA CASSEROLE BY EMERIL
This is a recipe from Emeril Live during his "Football Contest" episode. It is really delicious. The only changes I made to it was to drain the diced tomatoes. The recipe doesn't state how many tortillas to use but I suggest using 5 on the bottom layer and 5 on the second layer. I used approx. 14 and that was to much for our taste. Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast): 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme Combine all ingredients thoroughly. CRISPY-ON-THE-TOP TUNA AND GREEN PEA CASSEROLE (ROCCO DISPIRITO)
This recipe is based on one of Rocco Dispirito's from his book, Now Eat This! Diet. He says in its intro, "Who grew up eating tuna casserole? Raise your hands. That's just about everybody. Okay, this is not your mother's tuna casserole...nor does it use Tuna Helper. But it does taste just as wonderful - without losing any of its comfort-food flavor. I've wowed it up a bit with Dijon mustard, and I used whole wheat panko bread crumbs for that traditional crunchy topping. If you can't find these particular bread crumbs, you can always toast leftover whole wheat bread and break it into crumbs with a rolling pin." I made this the other night with French's French Fried Onions because I was out of panko bread crumbs. We loved this dish and it has become a new staple dish for us. Per serving: 351 calories, 10g fat (5g sat / 1g mono / 0.5g poly), 64mg cholesterol, 589mg sodium, 34g carbohydrate, 6g fiber, 36g protein. This calculates to 9 WeightWatchers Points Plus value. He says you can save 31 calories per serving by omitting the peas. Before his update, the classic tuna casserole has 28 fat grams and 826 calories - thank you, Rocco! :)

SPARERIB, RICE AND CHICK-PEA CASSEROLE
Steps:
- Preheat oven to 350°F. Season spareribs with salt and pepper. Brown spareribs in heavy large Dutch oven over high heat. Transfer ribs to plate. Add onion and garlic to pot and sauté until onion is translucent, about 5 minutes. Add all remaining ingredients except pimientos to pot. Bring to boil, scraping up browned bits. Return ribs and any collected juices to pot. Push ribs into rice mixture. Season with salt and pepper. Spread pimientos evenly over top. Cover pot and bake until meat and rice are tender and all liquids are absorbed about 50 minutes.
Tips:
- Use fresh or frozen peas. Fresh peas are best, but frozen peas are a good alternative. Avoid canned peas, as they can be mushy.
- Cook the peas until they are tender but still have a slight bite. Overcooked peas will be mushy.
- Use a variety of vegetables in your casserole. This will add flavor and texture. Good choices include carrots, celery, onions, mushrooms, and bell peppers.
- Use a creamy sauce. This will help to bind the casserole together and make it more flavorful. Good choices include a cheese sauce, a cream of mushroom soup, or a sour cream sauce.
- Top the casserole with a crispy topping. This will add texture and flavor. Good choices include a breadcrumb topping, a cornflake topping, or a potato chip topping.
- Bake the casserole until it is bubbly and hot. This will ensure that the casserole is cooked through.
Conclusion:
Pea casserole is a classic comfort food dish that is easy to make and can be enjoyed by people of all ages. With its creamy sauce, tender peas, and crispy topping, pea casserole is a surefire hit at any potluck or family gathering. So next time you're looking for a delicious and easy side dish, give pea casserole a try.
