Time 13m

Yield 4 servings

Number Of Ingredients 8

3 tablespoons apple cider vinegar
1 shallot, finely chopped
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
2 large ripe peaches, sliced into about 16 pieces
1 head Boston Bibb lettuce, washed and dried well
1 cup toasted pecan halves
4 ounces goat cheese, separated into 4 pieces and crumbled

Steps:

  • In a small bowl, add the cider vinegar and shallot and season with salt and pepper. Gently whisk in the olive oil until completely incorporated.
  • Place the peaches, lettuce leaves, pecans, goat cheese and dressing in a large bowl. Toss well to distribute the dressing. Divide the salad onto 4 salad plates. Serve immediately.

Tips:

  • Use fresh, ripe peaches: The quality of your peaches will greatly impact the flavor of your salad. Choose peaches that are fragrant and have a slight give when you press them.
  • Toast your walnuts or pecans: Toasting nuts brings out their flavor and makes them more fragrant. You can toast nuts in a dry skillet over medium heat, stirring constantly, until they are golden brown and fragrant.
  • Use a light vinaigrette: A light vinaigrette will allow the flavors of the peaches, walnuts, and arugula to shine through. A simple vinaigrette can be made with olive oil, vinegar, Dijon mustard, salt, and pepper.
  • Add other ingredients to your salad: You can add other ingredients to your salad to make it more substantial, such as grilled chicken, roasted vegetables, or goat cheese.

Conclusion:

Peach and walnut salad is a refreshing and flavorful salad that is perfect for summer. The sweet peaches, crunchy walnuts, and peppery arugula are a delicious combination. This salad is also very easy to make, and it can be tailored to your own taste preferences. You can add other ingredients, such as grilled chicken, roasted vegetables, or goat cheese, to make it more substantial.
