My Peach Bread Pudding image

My husband reviewed numerous bread pudding recipes and came up with this version. Top with melted vanilla ice cream if desired.

2 cups finely sliced peaches
¼ cup all-purpose flour
¼ cup white sugar
¼ cup rum
1 tablespoon ground cinnamon
1 pinch nutmeg
1 cup milk
1 cup heavy whipping cream
¼ cup butter
1 cup white sugar
⅔ cup brown sugar
4 eggs
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon ground nutmeg
3 cups stale bread cubes, crusts removed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix peaches, flour, 1/4 cup white sugar, rum, 1 tablespoon cinnamon, and 1 pinch nutmeg together in a baking dish.
  • Bake in the preheated oven until peaches are tender and bubbling, about 30 minutes. Remove and set peaches aside.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Grease a 1 1/2-quart casserole dish.
  • Stir milk and heavy cream together in a saucepan over medium heat; heat until just warmed and a film forms over top of mixture, about 5 minutes. Remove from heat; stir in butter until melted. Cool mixture to lukewarm.
  • Combine 1 cup white sugar, brown sugar, eggs, 2 teaspoons cinnamon, vanilla extract, salt, and 1/4 teaspoon nutmeg in a bowl; beat with an electric mixer at medium speed until combined, 1 minute. Slowly pour milk mixture into sugar mixture; stir to combine. Add bread cubes; stir gently. Fold in cooked peaches.
  • Pour batter into prepared casserole dish.
  • Bake in the preheated oven until pudding is bubbling and center is set, 45 to 50 minutes. Serve warm.

3 cups stale French bread, cut in 3/4-inch cubes
2 cups milk
2 eggs
1 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
4 tablespoons butter, melted and slightly cooled
1/2 cup sultana raisins
2 egg yolks
1 stick butter, not margarine
1 cup sugar
1/3 cup bourbon whiskey, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Place stale bread in a bowl with milk and squeeze the bread with your hand until well saturated with milk.
  • With an electric mixer on high speed in a separate bowl, beat eggs with sugar until thick and pale. Stir in the vanilla, cinnamon, nutmeg, butter and raisins to the egg mixture. Add the soaked bread crumbs to the egg mixture and stir well. Let stand for 10 minutes. It is important to allow enough time for the bread to absorb the egg mixture or the bread crumbs will float to the top during baking, leaving a layer of custard on the bottom of the dish.
  • Transfer the mixture to a greased baking dish. Bake until firm, or until a knife inserted in the middle comes out clean, about 45 to 50 minutes. Let it slightly cool in the dish.
  • Meanwhile, near the end of the baking time, make the sauce. With an electric mixer, beat egg yolks until thick and pale. In a saucepan, melt the butter and sugar. Pour the butter and sugar mixture over the egg yolks, beating constantly with the mixer, until well thickened. Stir in bourbon by hand. Serve the pudding warm with vanilla ice cream if desired. Pass the hot bourbon sauce separately.

While searching for a peach recipe I came upon this one that can be made any time of year, using either fresh or frozen peaches. A comforting kind of Southern-style recipe! If using frozen peaches, thaw & sugar them to taste.

1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract

1 2/3 cups water
4 slices bread, buttered with
butter
1 1/4 cups peaches, fresh, ripe

Steps:

  • Preheat oven to 350 degrees F.

1 pinch cardamom
3 medium eggs
1 cup half-and-half cream
1 teaspoon vanilla
5 cups cinnamon-swirl bread, 1-inch cubed
1/3 cup golden raisin, soaked in
Southern Comfort
1 cup heavy cream
1/2 tablespoon cornstarch
1 tablespoon water
3 tablespoons sugar
1/4 cup Southern Comfort

Steps:

  • Preheat the oven to 350 degrees.
  • Grease a 9x9 baking pan.
  • Beat the eggs in a large bowl until light and fluffy.
  • Beat in the sugar, vanilla and spices.
  • Add the half & half.

2 cups fresh peaches - peeled, pitted and halved
1 (14 ounce) can sweetened condensed milk
3 eggs, lightly beaten
1 ¼ cups hot water
¼ cup butter, melted
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
4 cups French bread, torn into small pieces
½ cup brown sugar
½ cup butter
2 tablespoons light corn syrup
1 tablespoon rum

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Chop the peaches and lightly mash them in a mixing bowl. Combine the sweetened condensed milk and the eggs; add them to the peaches and mix well. I was looking to make a twist on a traditional bread pudding and I came up with this. Made it for my husband and he almost ate the whole thing!! I'm sure his cardiologist wouldn't appreciate it, but it sure tastes good:)

2 package(s) 12 oz each, hawaiian king rolls, cubed
2 cup(s) heavy cream
1 cup(s) sugar
2 tablespoon(s) sugar
4 tablespoon(s) butter, melted
4 large eggs
1 teaspoon(s) vanilla
2 can(s) 15 oz each, sliced peaches, cubed
1 cup(s) pecans, chopped
SOUTHERN COMFORT SAUCE
1 stick(s) butter
1 cup(s) heavy cream
1 cup(s) sugar
2 large egg yolks
1/3 cup(s) southern comfort

Steps:

  • Preheat oven to 350 degrees and lightly butter a 9x13" baking dish.
  • Add bread cubes to a large bowl.
  • In a medium bowl, whisk 1.5 cups cream, 2 cups milk, 1 cup sugar 4 tbsp melted butter, 4 eggs and vanilla.
  • Add cream mixture and diced peaches to bread cubes and toss to combine.
  • Pour mixture into the greased dish. Let sit for 15 minutes.
  • Drizzle the bread mixture with the remaining 1/2 cup cream.
  • Sprinkle pecans on top then the remaining 2 Tbsp of sugar.
  • Bake until the center is set - about 45 minutes. Serve warm or cold with Southern Comfort Sauce &/0r whipped cream.
  • To make the sauce, first melt the butter in a heavy saucepan.
  • In a small bowl, mix cream, sugar and yolks - whisk together.
  • Add creamed mixture to butter - cook over medium heat until it comes to a boil, stirring constantly -reduce heat and cook for 4 more minutes.
  • Remove from heat and add Southern Comfort (it would also be good with Amaretto or Rum) - serve sauce warm or cold over bread pudding, stirring well before serving.

  • If you don't have day-old bread, you can toast fresh bread and then let it cool before using it.
