1 cup cherries (about 22 cherries), pitted and cut into quarters
2 tablespoons aged balsamic vinegar or balsamic reduction
1 tablespoon olive oil, plus more for drizzling
1 small shallot, minced
Kosher salt and freshly ground black pepper
5 peaches
One 6-ounce log mozzarella
12 fresh basil leaves, cut into chiffonade strips
