This is a quick but company-worthy cobbler. So simple, yet wins rave reviews. If desired, use 2 (32 ounce) cans of peaches in place of fresh peaches. If doing this, use peach syrup instead of water and then omit the white sugar from recipe. Also, yellow cake mix can be substituted for the white.

EASY PEACH COBBLER WITH CREAM CHEESE PIE CRUST

Easy Peach Cobbler With Cream Cheese Pie Crust image

I adapted this recipe from Sunset Magazine's "Cobbler for a Crowd". I did cut the sugar in the original recipe, which also calls for fresh fruit which has a better texture. I do add some fresh peaches for that reason when it is available.

Tips:

  • Use ripe peaches: This will ensure that your cobbler has the best possible flavor. If you can't find ripe peaches, you can also use frozen or canned peaches. Just be sure to thaw them before using them.
  • Don't overmix the batter: Overmixing the batter will make your cobbler tough. Mix just until the ingredients are combined.
  • Use a baking dish that is at least 9 inches in diameter: This will give the cobbler plenty of room to rise and bake evenly.
  • Bake the cobbler until the crust is golden brown and the filling is bubbling: This will take about 45 minutes.
  • Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream: This is the perfect way to enjoy this classic dessert.
