1/4 teaspoon cinnamon
2 tbsp cornstarch
2 tbsp lemon juice
¾ cup yellow cornmeal
¾ cup flour
2 tsp baking powder
3 tbsp packed brown sugar
1/4 teaspoon salt
¼ tsp cinnamon
1 large egg
4 tbsp of melted butter
1 tsp vanilla extract
1/2 - 1 cup buttermilk
1 1/2 cups heavy whipping cream
3 tbsp powdered sugar
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract

Tips:

  • Fresh is best: For the best flavor, use fresh peaches and corn when they are in season. If you can't find them fresh, you can use frozen or canned peaches and corn, but the flavor will be less intense.
  • Use a variety of peaches: Don't be afraid to mix and match different varieties of peaches for a more complex flavor. Some good options include yellow peaches, white peaches, and donut peaches.
  • Don't overcook the corn: Corn is best when it is cooked just until it is tender. Overcooked corn will be tough and chewy.
  • Use a good quality biscuit mix: The biscuit mix is an important part of this cobbler, so make sure to use a good quality brand. A good biscuit mix will produce light and fluffy biscuits that will complement the peaches and corn.
  • Don't overmix the batter: Overmixing the batter will make the biscuits tough. Stir the batter just until the ingredients are combined.
  • Bake the cobbler until the biscuits are golden brown: The cobbler is done when the biscuits are golden brown and the filling is bubbling.

Conclusion:

Peach corn cobbler is a delicious and easy-to-make summer dessert. With a few simple ingredients, you can create a cobbler that is sure to please everyone at your table. So next time you have a craving for something sweet, give peach corn cobbler a try.
