Time 1h

Yield 4 serving(s)

Number Of Ingredients 16

8 fresh peaches, peeled, pitted and sliced into thin wedges (I have only used fresh)
1/4 cup white sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch (I used flour)
1 cup all-purpose flour (I used self-rising and omitted the baking powder)
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
1/4 cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
  • Toss to coat evenly, and pour into a 2 quart baking dish.
  • Bake in preheated oven for 10 minutes(I cooked filling on top of stove until thickened).
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
  • Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal.
  • Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them.
  • Sprinkle entire cobbler with the sugar and cinnamon mixture.
  • I sprinkled only a little bit, since it was turning the top too brown for my taste.
  • Bake until topping is golden, about 30 minutes.

Tips:

  • Use fresh, ripe peaches: This will ensure the best flavor and texture in your crumble.
  • Slice the peaches evenly: This will help them cook evenly.
  • Don't overmix the crumble topping: Overmixing will make the topping tough.
  • Bake the crumble until the topping is golden brown and the peaches are bubbling: This will ensure that the crumble is cooked through.
  • Serve the crumble warm with a scoop of vanilla ice cream or whipped cream: This will make the crumble even more delicious.

Conclusion:

Peach sugar cookie crumble is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and juicy peaches, crunchy sugar cookie topping, and creamy vanilla ice cream or whipped cream, this crumble is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and easy-to-make dessert, give peach sugar cookie crumble a try. You won't be disappointed!
