cooking spray
1 egg
1 cup peanut butter
½ cup plain instant oatmeal
1 medium banana
¼ cup white sugar
¼ cup semisweet chocolate chips
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.
  • Beat egg in a large bowl. Add peanut butter, oatmeal. banana, sugar, chocolate chips, and vanilla extract. Place 1-inch balls of dough onto the prepared baking sheet; press balls down using a spoon.
  • Bake in the preheated oven 9 to 12 minutes; cookies will look slightly raw. Cool 10 minutes before serving.

2 barely ripe bananas
1/2 cup creamy peanut butter
1 1/2 cups Reese's Puffs® cereal, slightly crushed
4 craft sticks (flat wooden stick with round ends)

Steps:

  • Peel bananas; cut each in half crosswise.
  • With knife, gently spread peanut butter over each banana half. Press gently into cereal crumbs to coat.
  • Gently press stick into bottom of each banana half. Eat immediately and enjoy!

5 very ripe bananas
5 tablespoons creamy peanut butter
2 1/2 tablespoons honey or 2 1/2 tablespoons chocolate syrup

Steps:

  • Five bananas makes about 9 or 10 3-oz. popsicles.
  • For each banana, use 1 TB peanut butter. If the bananas are very ripe you may not need to add honey or chocolate syrup.
  • Puree in a blender, adding a liquid if necessary to make it pourable. I've used soy milk and this produces a nice smooth texture, but regular milk, juice or water would work as well.
  • Pour into molds and insert wooden stick. Freeze at least two hours or overnight.

1/4 cup sugar
1/4 cup peanut butter
1 cup low-fat milk

Steps:

  • bring water and sugar to a boil and boil for 3 minutes.
  • remove from heat and stir in peanut butter, mix well and then add milk.
  • cool for 10-15 minutes.
  • pour into6 (5 oz) paper cups.
  • add wooden sticks.
  • freeze until firm.
  • remove 3 minutes before serving --
  • peel off paper cups.
