1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
1 medium onion, sliced
7 fresh mushrooms, sliced
⅛ teaspoon red pepper flakes

¾ cup chicken stock
¾ cup smooth peanut butter
salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add the chicken pieces, and cook until chicken starts to turn white. Add the onion, mushrooms, and red pepper flakes. Season with salt and pepper. Cook, stirring constantly until onions are translucent, about 5 minutes.
  • Pour the tomatoes and chicken stock into the skillet, and simmer for about 10 minutes, or until chicken is cooked through. Stir in peanut butter, and cook stirring constantly until the sauce thickens. This should only take a minute or two. If the sauce is not thickening, you may stir in more peanut butter.

1 broiler/fryer chicken (3 pounds), cut up

  • In a large resealable plastic bag, combine the flour, salt and pepper. 1 1/2-2 lbs chicken breasts
4 tablespoons peanut butter (Creamy or Chunky)
3 tablespoons soy sauce
3 tablespoons white vinegar
3 tablespoons brown sugar
1 tablespoon olive oil, plus some (for cooking)
3 -4 garlic cloves
2 tablespoons ginger
salt and pepper
water (optional)
parsley flakes (optional) or fresh parsley (optional)
sesame seeds (optional)

Steps:

  • In a bowl, prepare the peanut butter sauce. Add the peanut butter, soy sauce, vinegar, brown sugar and 2 Tbs. olive oil together and stir until you form a smooth paste.
  • Dice garlic and ginger as fine as you can get them, I use a grater with small holes and grate my garlic so that there are no large chunks for those that don't care to bite into a large piece of garlic.
  • Cube your chicken into small bite sized pieces or cut into small strips if you prefer.
  • In a pan, heat up some olive oil (I usually use about 2 Tbs.) add the garlic and ginger and cook until fragrant, about 30 seconds depending on how hot you got the olive oil. Then add the chicken, season to your taste with salt and pepper, and cook until completely cooked through.
  • Add the sauce mixture and stir to coat all of the chicken. Reduce heat to a medium low and cook for an additional 5 to 10 minutes stirring frequently. If the sauce starts to become too think or clumps together add small amounts of water and stir to keep a nice consistency. The sauce should coat the chicken without being soupy.
  • Remove the pan from heat and serve the chicken over rice. Garnish with parsley or sesame seeds if you wish.

1/4 cup rice vinegar

1 large onion, chopped
2 garlic cloves, crushed
3 -4 tablespoons olive oil
1 tablespoon curry powder
1 teaspoon crushed red pepper flakes
2 quarts chicken broth
1 cup chunky peanut butter
1 (14 ounce) can diced tomatoes (no need to drain)
1 butternut squash, peeled, seeded and cubed
2 medium russet potatoes, peeled and cubed
salt and pepper, to taste

Steps:

  • Heat oil in large dutch oven over medium-high heat.
  • Saute onion and garlic, until onion is translucent. Stir in curry powder and red pepper flakes, and cook several seconds.

1 large onion, chopped
1/4 cup tomato paste

Steps:

  • In a large pot, heat oil until hot and brown chicken pieces on all sides. Remove chicken temporarily.
  • In the same frying pan, add the onions and stir until soft and slightly brown. Add the tomato paste and salt, and stir well.

1 hot red pepper, de-seeded and roughly chopped

Steps:

  • Place a large saucepan/casserole pot over a medium heat. Fry the chicken pieces, skin side down, for 10 minutes or until browned. Using tongs, turn the pieces of chicken over to seal the underside.

2 chicken quarters (can use breasts)
2 tablespoons olive oil
1/2 medium onion
2 garlic cloves

3 cups chicken broth or 3 cups stock

Steps:

  • Remove skin from chicken. Brown chicken in olive oil in a large skillet on medium heat, then remove & set aside. Add onion & garlic to skillet adding curry powder & red pepper flakes & lightly saute' until onion begins to soften. Add flour & stir constantly for 3 - 4 minutes to make a light roux. Lower heat to medium low (about 2 on the dial), then add chicken broth, stirring thoroughly to remove lumps (can use a wisk). Add chicken back to skillet, & cover. Cook for appx. 30 minutes, stirring occassionally & flipping chicken, until chicken is nearly done. Add peanut butter. Mix together & cook for another 10 minutes on low - med. low, stirring occasionally, until chicken is cooked through (no red juices when pierced). Serve over Egg Noodles.

  • Can debone chicken after it's cooked & add back to sauce before serving.
  • If the sauce gets too thick during cooking, add a little more chicken stock or broth.

50 chicken wings
2 (12 ounce) bottles beer
1 cup molasses
1/2 cup creamy peanut butter
1/2 cup fresh lemon juice
1/2 cup Worcestershire sauce
1/4 cup prepared mustard
1 teaspoon salt
2 tablespoons chili powder
1/4 cup chopped fresh parsley, , for garnish
1 -2 lemon, sliced thin,for garnish

Steps:

  • Preheat oven to 450 degrees F.
  • Remove and discard tips from wings and cut each wing in half at joint.
  • Combine remaining ingredients except parsley and lemon slices in a large saucepan.
  • Cook over low heat for about 15 minutes, until reduced and thickened to the consistency of thick gravy.
  • Place wings in a large roasting pan and cover with sauce.
  • Turn until each wing is well coated.
  • Bake for 15-20 minutes.
  • Serve on large platter.
  • Garnish with parsley and lemon slices.

8 cups romaine lettuce, roughly chopped
4 cups cooked chicken
1 apple, cored and cut in wedges
1 1/2 cups grapes, halved
1/4 cup water
1/4 cup creamy peanut butter
1 tablespoon reduced sodium soy sauce
2 teaspoons honey
2 teaspoons cider vinegar
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes

Steps:

  • On six salad plates arrange romaine, chicken, aplles, and grapes.
  • In a small bowl whisk together water, peanut butter, soy sauce, honey, vinegar, ginger, and crushed red pepper.
  • Drizzle peanut butter mixture over arranged salads.

10 fresh whole chicken wings
chicken wing dry rub, as needed, recipe follows
2/3 cup seedless raspberry jam
1/3 cup creamy peanut butter
1/2 tablespoon hot sauce

Steps:

  • 1. with a sharp knife, cut the tips off the chicken wings and save them for stock. Slash the inside of the wing joint to help them cook more evenly but don't cut them all the way through. Sprinkle liberally with the chicken wing dry rub. Set aside.
  • 2. In a small pan over low heat, warm the jam, peanut butter, and hot sauce for about five minutes stirring often until well blended. Keep warm.
  • 3. Prepare the grill for cooking over direct medium heat. Grill the wings for about 25 minutes, turning often. The wings are done when they are nicely browned and the juices run clear. Remove the wings to a platter. You may serve the wings whole but if you like to serve them in individual segments, cut them apart now. Transfer the wings to a large bowl. Pour the peanut butter and jelly mix over the wings. Toss to coat well. Transfer to a platter to serve. Serves 10
  • 4. Chicken wing dry rub: 2 tablespoon salt 2 tablespoons sugar in the raw 2 tablespoons granulated garlic 2 tablespoons onion powder 2 tablespoons paprika 2 teaspoons good-quality chili powder 2 teaspoons finely ground black pepper 1 teaspoon lemon pepper 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper mix together and store in an airtight container. Makes about 3/4 cup.

1 cup smucker's natural-style peanut butter
1/4 cup soy sauce
1/4 cup white wine vinegar
1/4 cup lemon juice
6 garlic cloves, crushed
1 teaspoon red pepper flakes
2 teaspoons ginger, finely chopped
2 1/2 lbs boneless skinless chicken breasts (cut into 1 1/2 inch strips)

Steps:

  • Prepare the marinade 2 hours before your ready to grill.
  • Mix all the ingredients except chicken in blender until well mixed. If too thick, you can add up to 1 cup of water to thin out.
  • Marinate the chicken for 2 hours.
  • Lightly oil a medium hot BBQ grill and place the chicken on the grill for 6-8 minutes.

My wife found this recipe, that we all love, in the back of a magazine, and we have been making it for about 7 years. You can make it spicy or mild depending on your preference. Each time you can add or subtract the amount of PB, we like alot, depending on taste, enjoy!

2 lbs chicken breasts
2 (8 ounce) cans diced tomatoes with green chilies (mild or hot)
4 -8 ounces peanut butter (creamy or crunchy)
2 -3 cups white rice
extra peanut butter
crushed red pepper
honey
onion
garlic
1/2 cup chicken broth

Steps:

  • Put peanut butter and tomatoes w/chilies in crock pot on low, and any optional ingredients. Then add the chicken, I cut some up and leave some as whole breast, it will pull right apart when done in a couple of hours. When you are ready to turn it off, make some rice of your choice and use it as the bed for the peanut butter chicken, I use a fork and shred the chicken up in the crock pot, so it can absorb all the flavors, enjoy!
