GRANOLA PEANUT BUTTER BALLS
I have a chef friend, Nancy Russman in Louisville Kentucky, who spends a lot of her time teaching kids to cook and eat healthier snacks. When she first met me and my son there at a Julia Child birthday party I was cooking for, she made a big impression on him, much bigger than Julia! Probably because she's very short, and closer to his size than Julia. She taught him the cheer of "Go Cats!" in support of the Louisville Wildcats. We also had a nice tour of the Louisville Slugger Baseball Bat Factory, a visit to a bourbon distillery for another Julia party and a visit to my favorite goat cheese maker, Judy Schad, in nearby Greenville Indiana. This is one of Nancy's kid-friendly recipes that the kids can help make.

These are granola bars made with whole-grain flour, oats, and freshly ground peanut butter as the key ingredients. They're low in fat, but the fat is good fat, and they're low in sugar, which is natural sugar from pure honey.

PEANUT BUTTER GRANOLA PINWHEELS
I came across this easy and tasty snack while searching online for healthy munchies for kids. Great for after school, it's really quick to make and filling enough to hold the kids until dinner. To satisfy heftier appetites or to serve as a power lunch, cut each tortilla into fewer pieces or provide one per child. The recipe is easy to increase as needed. -Mary Haluch, Ludlow, Massachusetts

Steps:
- 1. Add all the dry ingredients to a large bowl. Mix them together.
- 2. In a separate (microwave safe) bowl, mix together the wet ingredients, then microwave them for about 20 to 30 seconds. This will make it easier to mix and add to the dry ingredients since it's really sticky!
- 3. Pour wet ingredients into dry and mix! Keep mixing until the wet binding ingredients are as well distributed as possible. Put some muscle into it!
- 4. Put the mixture into a shallow pan and flatten it down. Done and done!
- 5. Cut them into about 12 bars (they are probably a bit crumbly still, but don't worry - the fridge will bind them!) and store them in the fridge. You can either just store them together in the big pan (covered with foil) or separately wrap them for easy grabbing and going!

Tips:
- Choose the right peanut butter. Use a natural peanut butter that doesn't contain any added sugar or oil. This will give your granola a more natural flavor and healthier nutritional profile.
- Use old-fashioned oats. Old-fashioned oats are less processed than quick oats, so they'll give your granola a chewier texture.
- Add your favorite nuts and seeds. Feel free to add in any nuts or seeds that you like, such as almonds, walnuts, pecans, sunflower seeds, or chia seeds.
- Sweeten your granola to taste. You can use honey, maple syrup, or agave nectar to sweeten your granola. Start with a small amount and add more to taste.
- Bake your granola at a low temperature. This will help to prevent it from burning and ensure that it bakes evenly.
- Store your granola in an airtight container. This will help to keep it fresh and prevent it from going stale.
Conclusion:
Peanut butter granola is a delicious and healthy snack or breakfast option. It's easy to make and can be tailored to your own preferences. With so many different recipes to choose from, you're sure to find one that you love. So next time you're looking for a healthy and satisfying snack, reach for a handful of peanut butter granola.
