Steps:

1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
1/4 teaspoon ground cinnamon
2 cups buttermilk
2 large eggs
2 medium bananas, cut into 1/2-inch slices
2 tablespoons canola oil
2 tablespoons salted butter
1/4 cup peanut butter
2 tablespoons maple syrup

Steps:

  • Whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Add the buttermilk and eggs. Whisk together, gradually incorporating the flour mixture, just until combined. Add the banana slices and gently combine; the batter may be slightly lumpy. Let stand 10 minutes.
  • Place a griddle pan over medium heat. Add the canola oil and butter. Using a ladle, pour 1/2 cup batter for each pancake, roughly 2 inches apart. I use to make this pb pancake for years and was astonished not to find it on zaar. After making Recipe #371305 for the first time I thought it would be nice with my pb pancake - and here it is! This makes one large pancake for one person. Nice for breakfast, but also very good as protein rich after workout snack. I don't add any sweetener because the yoghurt is sweet enough for me, but if you like it sweeter, feel free to add sweetener to the yoghurt-blueberry mixture.

1 egg
1 tablespoon peanut butter, natural style
1 tablespoon skim milk
1 pinch baking soda
1 pinch salt
1/2 cup vanilla yogurt
1 tablespoon blueberries
1 tablespoon cottage cheese
artificial sweetener, to taste

Steps:

  • Spray a non stick skillet with cooking spray and heat on medium until hot.
