THAI PEANUT CHICKEN

Thai Peanut Chicken image

This is a very tasty Asian-inspired dish made with chicken and broccoli in a spicy peanut sauce. If you like it mild, use less cayenne, like it spicy, use more. If you're salt conscious, use low sodium soy sauce.

PEANUT CHICKEN FROM TOGO

Peanut Chicken from Togo image

Posting for ZWT7. I have not been able to try this recipe as of May '11. It definitely sounds like something that is easy to put together and would have flavors that we enjoy. Found on African Cooking website and submitted by K. Strangeland.

Time 30m

Yield 2 , 2 serving(s)

Number Of Ingredients 6

1/2 lb chicken breast, boneless, skinless
1 (14 ounce) can stewed tomatoes
2 teaspoons extra virgin olive oil
1/4 cup onion, chopped
1 garlic clove, minced
3 tablespoons peanut butter

Steps:

  • Boil 1/2" of water in pan. Add chicken, cover, and steam 12-15 minutes.
  • Drain chicken and shred it with 2 forks on a cutting board.
  • Meanwhile heat oil in frying pan. Saute onions and garlic about 6 minutes, until translucent.
  • Stir in shredded chicken, tomatoes, and peanut butter. Heat 5 minutes.
  • Serve over white rice.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid any scrambling during the cooking process.
  • Choose the Right Peanut Butter: Use a creamy, natural peanut butter for the best flavor and texture. Avoid using chunky or low-fat peanut butter, as they will not yield the same results.
  • Toast the Peanuts: Toasting the peanuts adds a nutty flavor and aroma to the dish. You can toast them in a pan over medium heat or in the oven at 350°F for 5-7 minutes.
  • Use Fresh Ginger and Garlic: Fresh ginger and garlic add a lot of flavor to the dish, so make sure to use them if you have them. If you don't have fresh ginger or garlic, you can use ground ginger or garlic powder, but the flavor will be less intense.
  • Simmer the Sauce: Simmering the sauce allows the flavors to meld together and develop. Be sure to simmer it for at least 15 minutes, or longer if you have the time.
  • Serve with Rice or Noodles: Peanut chicken is traditionally served with rice or noodles. You can use any type of rice or noodles you like, but jasmine rice or egg noodles are popular choices.

Conclusion:

Peanut chicken from Togo is a delicious and easy-to-make dish that is perfect for a weeknight meal. The creamy peanut sauce is flavorful and addictive, and the chicken is tender and juicy.
