I was very young when my Aunt Totsy introduced me to this pie. She was the baker at the local Kresge's store and wow, could she bake pies. She lived upstairs from us and one day offered me a piece of pie. I ate it and enjoyed it tremendously and thought it was apple. She later told me it was made with Ritz Crackers. I was so...

2 9" pie crusts
30-36 plain ritz crackers
2 tsp cream of tartar
2 c water
2 c sugar
1 grated rind of one lemon
2 Tbsp lemon juice
2 Tbsp butter
1/2 tsp cinnamon, ground
1/4 tsp nutmeg (optional)

Steps:

  • 1. Preheat oven to 425'F. Bake this pie for about 30-35 minutes.
  • 2. Put the sugar, cream of tartar and water in a saucepan over medium high heat and bring to a boil, then lower the heat and simmer for about 15 more minutes. Add the lemon rind and juice. Cool.
  • 3. Line your pie tin with one of the pie crusts. place the Ritz Crackers in the pie crust. Pour the cooled syrup over the crackers.
  • 4. Dot with your butter and sprinkle with the spices.
  • 5. Put the other pie crust on top. Trim and flute the edges. Put a couple of slits in the top to let the steam out.
  • 6. Bake until the crust is crisp and golden. It is recommended you put this pie into the fridge to cool before eating, it tastes much better cool.
  • 7. Top with your favourite whipped topping, a slice of cheese or a la mode. It's up to you.
  • 8. I had mine with a tall glass of milk and it was so delicious.
  • 9. Enjoy!
