Categories     Vegetable     Side     Sauté     Quick & Easy     Spinach     Pea     Winter     Shallot     Gourmet

Yield Makes 4 servings

Number Of Ingredients 9

2 medium shallots, thinly sliced
2 garlic cloves, thinly sliced
1 tablespoon vegetable oil
1 tablespoon unsalted butter
10 oz frozen peas
1/4 cup water
5 oz baby spinach
3/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cook shallots and garlic in oil and butter in a 12-inch nonstick skillet over moderate heat, stirring, until soft, about 6 minutes.
  • Stir in peas and water and cook, covered, stirring occasionally, until peas are tender, about 5 minutes.
  • Stir in spinach, salt, and pepper and cook, tossing, until spinach is just wilted, about 1 minute.

Tips:

  • For the best results, use fresh, high-quality ingredients.
  • Rinse the rice thoroughly before cooking to remove any starch and impurities.
  • Use a heavy-bottom pot or Dutch oven to cook the rice, as this will help to evenly distribute the heat.
  • Don't stir the rice too much while it's cooking, as this can make it sticky.
  • Let the rice rest for a few minutes before serving, to allow the flavors to meld.
  • For crispy shallots, slice them thinly and fry them in hot oil until golden brown.
  • Serve the peas and rice with your favorite toppings, such as grilled chicken, roasted vegetables, or a simple green salad.

Conclusion:

Peas and rice is a simple but delicious dish that can be enjoyed for lunch or dinner. It's also a great way to use up leftover rice. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying meal that the whole family will love.
