1/2 cup packed brown sugar
Dash ground nutmeg
Dash ground cinnamon
1-3/4 cups chopped pecans
1 pound dark chocolate candy coating, coarsely chopped
3 tablespoons shortening, divided
1 pound milk chocolate candy coating, coarsely chopped
1 pound white candy coating, coarsely chopped
1-3/4 cups dried cherries or cranberries

Steps:

  • In a large skillet, melt butter over medium heat. Stir in brown sugar and spices; bring to a boil. Cook and stir until sugar is completely dissolved, about 3 minutes. Stir in pecans until coated. Spread onto foil to cool. , Line two 15x10x1-in. pans with parchment or waxed paper. In a microwave, melt dark chocolate candy coating and 1 tablespoon shortening, stirring until smooth. 7 tablespoons butter
1/2 cup brown sugar
2 cups pecan pieces
Salt
Cayenne pepper
Pinch ground nutmeg
Pinch ground cinnamon
1 pound semisweet chocolate, cut into pieces
1 pound milk chocolate, cut into pieces
1 pound white chocolate, cut into pieces
2 cups dried cherries, rehydrated and chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large saute pan, melt 4 tablespoons of butter. Add the brown sugar and stir until the sugar dissolves and is bubbly. Add the pecans. Season the pecans with salt, cayenne, nutmeg, and cinnamon. Continue to cook, stirring constantly, until the sugar starts to caramelize and coat the pecans evenly. Cook for about 4 minutes. Remove the pan from the heat and spread the pecans over a parchment lined baking sheet. Place the pan in the oven and roast the pecans for about 6 minutes. Remove the pan from the oven and cool completely. Break the pecans into small pieces.
  • Fill 3 small saucepans halfway up the pan with water. Place the pans over medium heat and bring to a boil and then reduce to a simmer. In three separate mixing bowls, add each type of chocolate into the individual bowls. Place the bowls over the saucepans. After about 2 minutes over the heat, the chocolate will start to melt. Stir each chocolate until totally melted. Remove the chocolate from the heat and stir 1 tablespoon of butter into each bowl of chocolate. Pour each type of chocolate over the marble or a large parchment paper-lined baking sheet. Sprinkle the pecans and cherries over the chocolates. Using a metal spatula, spread the mixture out evenly back and forth to about 1/4-inch thick. Either place the marble in the refrigerator or allow to sit out until set, about a couple of hours. Break the bark into medium pieces and serve.

24 graham cracker squares

  • Preheat oven to 350 degrees.

I'm on a roll here today! Here is another old recipe from the past. My Mom made this one for us as children. Always around the holidays when she baked cookies and fudge and lots of candies. 1 c packed brown sugar
2 c sugar
1 c milk
3 Tbsp butter
1 1/2 tsp good vanilla
1 dash(es) pecans, coarsely chopped

Steps:

  • 1. In a 3 quart saucepan combine the sugars and milk. Bring to a boil over medium heat, stirring constantly. Continue cooking without stirring until the mixture reaches the soft-ball stage (237 degrees F on a candy thermometer).
  • 2. Remove from heat. Add the butter and vanilla, but do not stir. Let the mixture cool without stirring until it reaches 110 degrees F. and the outside of the pan feels lukewarm, about 40 minutes. While the mixture is cooling, butter and 8-inch square pan.
  • 3. With a wooden spoon beat the mixture until it becomes thick and begins to lose its gloss. Quickly stir in the pecans, and pour into the pan. Don't scrape the sides, since they may be sugary. Cut with a sharp knife into 1 1/2 inch squares.

4 eggs

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch jellyroll pan.

3 c all purpose flour
1/2 c sugar
1/2 tsp salt
1 c butter, cold
4 eggs, slightly beaten
1 1/4 c dark corn syrup
1 1/4 c sugar
3 Tbsp butter, melted
2 tsp vanilla
2 1/2 c pecans, chopped
1/3 c dried cherries, snipped (or use dried cranberries)

Steps:

  • 1. Preheat oven to 350. Line a 15x10x1 inch baking pan with foil, extending the foil over the edges of the pan. Grease the foil, set pan aside.
  • 2. In a large bowl, combine flour, the 1/2 cup sugar, and the salt. Using a pastry blender, but in the 1 cup of butter until mixture resembles coarse crumbs. Press mixture evenly into prepared pan. Bake in preheated oven for 20 minutes.
  • 3. Meanwhile, in a large mixing bowl, whisk eggs, corn syrup, the 1 1/4 cups sugar, the 3 tablespoons butter, and the vanilla until combined.
  • 4. Sprinkle pecans and dried cherries over hot crust. Slowly pour egg mixture over all. Bake for 25-30 minutes or until set. Cool completely in pan on wire rack. Lift baked mixture from pan using the foil. Remove foil. Cut into bars. Makes 48 bars.
  • 5. These freeze great!!!!
